- Chicken Tikka Masala was back in 2012 voted the UK's favourite dish, not curry, dish! That might not be true now but Chicken Tikka Masala continues to be a firm favourite of many. This tasty sweet & creamy curry is often for many an 'entry level curry but this recipe I share here is my twist on this very popular curry and it has a bit more going on and would satisfy even though most serious curry enthusiast.

1 CHEF'S SPOON(30g) OF VEGETABLE OIL
1 TBLSP OF GARLIC GINGER PASTE (50/50)
1 TBLSP OF TOMATO PASTE
1 PINCH OF METHI LEAVES
2 GREEN CHILLIES
1 TSP OF KASHMIRI RED CHILLI POWDER
2 LADLES OF BASE GRAVY
1 CHEF'S SPOON OF COCONUT FLOUR
1 TBLSP OF GROUND ALMONDS
1 TBLSP OF BROWN SUGAR

One of the local curry houses to me had this curry that was very similar to a chicken tikka masala but more punchy and spicy. I don't normally go for CTM but although similar this one the curry house did became a favorite for a few visits. On the menu it was called chicken Jalali and had won awards. They kept the certificate of award on a table by the door with a cut out from the local rag.
Since changing chefs though it isn't the same somehow.
This man is brilliant I have is 3 books he's written he learnt me everything about Asia cuisine done wright the way he shows you thay am hachuly better then the many I have brought from a takeaway thank you juulian

Such a diversity of Indian dishes and all people want to eat is chicken tikka masala.
I have the same burner as you but I use a portable induction hob beside it to keep my base gravy on the simmer.
Been using your tikka masala sauce for a few years now julian. It's brilliant as is your tikka masala curry. Very authentic but better.

Made this for lunch today and it was great! Been having some trouble getting the chicken tikka pieces right when I use your oven method though. Flavor is great but it's proving difficult to get any crispy bits. Will try the cast iron next time!
Hi JM. I do my tikka in the oven with success. I head it at 275c for 30 mins then i slide the tika in on the grills. Trick is to keep the oven door slightly open with a fork to let the steam escape. This allows the marinade to stick to the chicken. Will char faster too as drier environment. Put foil on the bottom of your oven. Drippings will smoke up and add BBQ flavour. I usually take them out when the his a temp of around 65c then I blast them with a cheap kitcehn blow torch for extra char.

British Indian, been brought up on traditional punjabi cooking but BIR Chicken Tikka Masala is still my fave curry of all time !

I've been making the recipe from your book for tikka masala but it seems to come out quite gritty after adding the coconut flour / almond. Is there a way to avoid this? I ended up blending the sauce at the end but still a bit gritty.
Any chance of you making a phall curry? Would love a recipe without using base gravy

This worked out amazing! I went out and got all the pastes and coconut flour and almond powder. I had everything else in the spice cupboard... Even bought an aluminium pan, saw the difference than cooking in a normal pan straight away! Holds heat really well, proper caramalising on the edges. So I'm wondering, I don't suppose you know what I can do with 2kg of Kashmiri Masala paste? 🤣 I could only get a big tub of it, cost me a tenner. It says on the side it stores for 6 months, but I don't even know if we'll use it all in that time in just Chicken tikka and the masala. Can this be used in other curries or starters? We like chicken tikka but we can't be eating it for breakfast, dinner, and tea for the next six months. Any ideas? Cheers.
Freeze in portions?
I know Julian uses 'Olympic' brand for his tandoori and tikka paste. However, tubs are over 2kg and I just don't have the space. Any one tried the masala sauce with just all pataks? CHeers.

Julian could you please tell me how many tablespoons they are in a chefs spoon
Mine works out at 4 level tablespoon measurements to a level chef's spoon with water. A tablespoon being the proper measurement and not just a tablespoon I use to eat with from the kitchen drawer.

If you're new to this it's coconut milk powder you need not coconut flour/powder.
