You can better judge when you know what kind of accommodation you want.
Honestly I can't tell you why nationality matters. But I think UAE and other gulf countries tend to Favour people with stronger passport (Americans, Europeans, Canadians etc) than those with weaker passports

The work visa can only sponsor your kids if you have a particular amount of salary. In short, you can sponsor your kids if you have a minimum salary of 4000 dirhams.
To sponsor your husband, you will need to follow additional procedures

That's the best way to come here actually.
But it's rare since you must secure a UAE license first
But most UK, and US nurses come that way because their license permits them to work here.
For us, we always need to get the license first before we can secure the job.
