You can write first and then record the video while explaining. It takes too much time w.r.t the content. I respect your knowledge and teaching. But during exam revision for students like us who only open syllabus just one day before the exam, it becomes difficult to watch a 25min video for just 1 topic. So mam I would say write first then record the video while explaining.
