Using just about any instant chat (fb, messenger, skype ect) all does this exactly to prevent people from leaking their IP address. The nice map in the video here isnt showing the location of the server. it shows where google have their headquaters. Or rather. Where to that IP is registered. The Ip's i get for my own connection tells me in in a whole other city than i live in because my ISP have a center there. In order to actually get the address of the server youd need access to the ISPs costumerlist that matches IP to costumernames and addresses.
you could have just pinged it and get the IP address of the server, but I guess this is more fun it takes a lot longer :) (not considering the fact that you can't do much with the IP address)
