    Are these the correct amounts? Ingredients for 6 loaves: 4 Kg flour (bread flour or village flour is best), 3070g (3070 ml) water, 40 g salt, 500 g leaven (sourdough starter).

    What type of flour is used please? Is it village flour?

    What is the temperature of this clay oven? the flour and the normal wheat.
