Regular wood glue contains water which you'd be trapping in between the layers when clamping. The wood then has to expell this water again after it's already become a part. After having some woods dry for years it's a bit counterintuitive to add water just as they are becoming crucial parts of the guitar. Epoxy or PU don't contain any water.
