You’re absolutely right, it IS easy to make - I’ve made it before - and it IS delicious! The only problem I have with lemon curd, I can’t resist just eating it with a spoon! SO GOOD!

Hard to get a place when they want you to make 3x the amount of rent a month (average cost of a two bedroom is around $1200 USD/mo here) and my husbands employer cut their hours with another cut in the next few weeks. Rentals don't count my contractor delivery job as income (but a mortgage company will) here, and sadly our student loans disqualify us for a home loan. So we got caught in the extended hotel trap. We pay $413/wk but... And I laugh in frustration... Rental properties don't count in the fact that if we can afford $1600+/mo we can afford to pay them rent. Heavy sighs. I am grateful for the roof over our heads. Its better than being on the street. My son also lives with us and has health issues that prevent him from working, and a lot of my time is spent taking him to and from drs and specialist appointments. Hence why I don't have a real job. A real job won't let me have time off in short notice or even long term notice, not with the amount of appointments my son has.. He's trying to get on disability but its going to take awhile. He should be approved, but the government likes to take awhile to decide such things. I have an air fryer, a stove top, and a crock pot. Did you know you can make ribs in a crockpot? They're not as good as being on a grill or broiled in an oven. But they're edible. I'm going to try and do a Hawaiian Ham in the crockpot for Thanksgiving. If it works, we will try it again for Christmas. If we had the extra money I'd get an airfryer oven so I can make a pie. I have the fresh (now frozen) pumpkin just need the oven. All and all as frustrating as it is, we are still blessed. We are considering a move to a different state where we might be able to make more, and this particular state has better health care providers and has some really good health practitioners that are familiar with my son's health issues. Mainly Fibromyalgia and Hashimotos Disease. He's going to be going to be subjected even more testing as they think he has chronic fatigue syndrome but they have to rule out all the other possibilities of his fatigue first. The fibro has been the most difficult for him as he's in constant pain. He sleeps a lot to counteract being awake and being in pain. He's only 24 and is facing a life time of agonizing pain. I worry about him, he's depressed and anxious a lot too. We're just doing the best we can. Its all we can do, and I know this won't be forever. Just seems that way sometimes. I like watching Andy because he gives me ideas of new and different things to cook for my son and husband. Keeps my mind off the stress. I'm the happiest when I am cooking.

Include a box of delicious & interesting thin cookies like Biscoff, Anna’s almond or ginger thins, Earl Grey tea cookies, shortbread. Add a small pack of loose leaf tea, or teabags in a complimentary flavour. A bit of inexpensive cellophane, tissue paper, & ribbon, & you have a gift that costs $10-$20, but is memorable. You might have the jar eagerly returned to you for you for a refill. Don’t even get me started on passionfruit curd! 🥰

It's an old English recipe so like most other British dishes it's uses whole farmhouse ingredients. There's really no good alternative that won't ruin the flavour, texture and consistency.
I was brought up on that stuff, loved a dollop on my semolina pudding, between two slices of bread or even straight from the jar. Jam, or golden syrup sandwiches.. I'd go out to play, get filthy black and come back home when I was hungry, it'd be a hot soapy flannel to clean my hands, then here's a sandwich and back out to play..
