Ingredients: For 4 to 5 servings
Seviyan (Vermicelli): 250 grams
Tamatar (Tomatoes): 3 big (200 grams)
Ande (Eggs): 4
Tel (Cooking oil): 2 tablespoons
Adrak lehsan ka paste (Ginger garlic paste): 1 ½ tablespoon
Haldi powder (Turmeric powder): ½ teaspoon
Bareek namak (Salt): 1 ½ teaspoon
Lal mirch powder (Red chilli powder): 1 ½ teaspoon
Garam masala powder (Spices): ½ teaspoon
Kari patta (Curry leaves): a handful
Kata hua hara dhaniya (Chopped coriander): a handful
Sabith hari mirchein (Whole green chillies): 3
Procedure:
1. Frying pan mein sewiyan dalkar badami rang ke hone tak bhoon lijiye aur nikal lijiye.
2. Ande ubaal lijiye. Inka chhilka nikal kar, andon ke gol slices bana lijiye aur rakh lijiye.
3. Doosre pan mein tel daliye. Adrak lehsan ka paste daliye. Tees second tak ise bhuniye.
4. Kari patta daliye, haldi powder aur bareek kate hue tamatar dalkar achhi tarah se mila lijiye.
5. Dhakkan dhaanp dijiye. Medium aanch par pakaiyye ke tamatar gal jaayein.
6. Jab tamatar gal jaayein, tel chhootne tak inhe bhuniye.
7. Bareek namak daliye aur lal mirch powder daliye. Pandrah second (15 sec) tak bhuniye.
8. Teen sau pachas ml (350 ml) paani (water) daliye.
9. Garam masala powder daliye, kata hua hara dhaniya aur sabith hari mirchein dalkar achhi tarah se mila lijiye.
10. Dhakkan dhaanp dijiye. Jab paani mein ubaal aa jaye, bhune hue sewiyan is mein daliye.
11. Medium aanch par pakaiyye ke sewiyan gal jaayein. Aanch band kar lijiye.
12. Sewiyon ko serving plate mein nikal kar ande ke slices se sajaiyye.
Tamatar Sewiyan tayyar hain.
