There's no difference between joule or sous vide. Yes they're pushing their own sous vide machine, but this channel is dedicated to the sous vide. Buying joule keeps them in business and the free content alive.

Guys, stop fretting about the Joule product placement. Chefsteps is a channel that puts out high quality videos, both in information and production, they need to have a source of income too!! They're just promoting a product that is perfectly aligned with their work. Hell, you can make this same recipe with a makeshift water bath. Support the channels you like, stop bashing them just because of sponsorship. It's not like they're promoting Best Fiends. C'mon.
Chefsteps' recipes are all about being super high-tech and everything. I love how unique their techniques are and how much you can actually make with Joule or Sous-Vide. So, I don't see why so many people question their equipment. I think this channel shows cool and modern baking/cooking videos even if most of us won't make most of these foods (aka me). Keep up the good work, Chefsteps crew!
I actually bought myself a sous vide tool as a birthday gift and couldn't be happier that chefsteps is making a lot of joule videos. each one teaches me new things I can do at home, expanding my knowledge in the kitchen

I just made this recipe and it came out great! The base thicken much but I didn't mind it too much. I added Brie cheese at the last minute of churning and marbled in Blueberry Lavender jam and I came out fantastic!

Be aware dry ice comes in different forms. Industrial and food grade. Industrial can have heavy metals present. (Mercury, etc) is not intended for consumption, or food preparation.

But no, we have to make ICE CREAM in a sous vide xD Seriously, maybe consider making something that isn¨t sous vide, i know it's an awesome way of cooking, but it isnt available to a lot of us :) Just a thought though, i still like your videos
It was more of a comment on the fact that they have been very sous vide orientated since they introduced Joules. I'm fine with that, and i understand it, since it's a great way of advertisement. But i feel that the channel had a greater feel of variety before it was introduced, if that makes any sense .)
I didn't add enough salt in the beginning and 2.5 lbs of dry ice later, and a very carbonated whipped cream-like outcome (which only thickened up much later after adding more salt!), I definitely do not have soft serve 😂 Moral of the story: the recipe seems like a lot of salt, but listen to the man!
this recipe is like something straight outta one of heston blumenthal's ice cream videos, except for the sous vide part, surprisingly, he just did his the old fashioned way.

i actually tried using dry ice to chill a cup of water and drink it afterwards when the dry ice has completely dissolved. It tasted sour and astringent. Dont know how that'll work out here.
never really understood the Joule hate, I've been following this channel for a while now and even when i binged on theyre old videos they were all about the sous vide, its why i tried it out to begin with. Joule isnt some sponser from some company they made this and designed from the ground up and are proud of it, and im sure you would feel the same if you made something people wanted to see.
AMAZING!!!! My father in law is from Wisconsin and misses the frozen custard of his childhood. I've made him custard but never thought to add the Instant Milk to make it creamier like you guys did with the soft serve recipe... Does the powdered dry ice make it slightly carbonated? if so we'll opt to make it in the ice cream maker of our choice otherwise. I also have access to liquid nitrogen that we use to make gelato would that be to cold?
When you said that "you can't go too slow," did you mean that it is not possible to go too slow for this recipe or going to slow will mess up the recipe?
I love these videos and the style they are presented, but it just seems like one long series of commercials for the joule now. Please, experiment with other cooking methods too!
But wouldn't CO2 plus acid fat of eggs and milk react and go rancid? Isn't liquid nitrogen a better solution here, or using a metal bowl cooled by dry ice instead of dropping the dry ice into the custard? Thanks

Can I use the ice cream maker tool that comes with that brand of stand mixer instead of dry ice? I can't get any dry ice where I live, but I purchased the cold bowl for ice cream that Kitchen-aid sells. I want to fill up my belly with frozen custard ༼ つ ◕_◕ ༽つ
The consistency probably won't be as smooth, but it will definitely be fine in an ice cream maker and is a safe way to go. But I would double-check to make sure you can't get dry ice locally. Most people simply haven't noticed it, but almost every grocery store stocks some in the front because it is cheap and lasts basically forever when stored properly. Enjoy your sugar rush!

Ice cream with sous vide... It only takes an hour! Opposed to 5 minutes on a dove boiler. And with that much sugar, it won't break. Dry ice was a cool tip though. At least this infomercial for Joule had a benefit

What's the hate about Joule all about? .. Big deal, so they are pushing their product. It's not like they are only doing recipes because of Joule. Sous Vide has always played a MAJOR role in recipes, it was just a Polyscience Sous Vide, not their own, so lighten up and enjoy the recipes and tips because they are as good as they have always been and I can't imagine that ever chaging, no matter how many other products they end up releasing.
You guys all complaining about how Chef Steps shows you different ways to use the product that THEY MADE AND SELL and get all salty about it, what, would you prefer them to just show off Joule at the beginning of every video without saying how on earth to use it?

You can use a standard stovetop/induction burner method... It's not hard.

You have to ask for it. It's rarely sold openly.

In my experience, it does get a little carbonated. They have a nitrogen churning method now.

I just tried this recipe and it's extremely salty and way too sweet. Cut the amount of sugar and salt by half and it's considerably better.
Does anyone know if an electric hand mixer is good enough to mix the custard at that last step? Or is the standing mixer a must?
Hand mixer is not good enough, a beater (has the two attachments) might be.
