    I'm yet to perfect this recipe due to my ingredients being super close to expiry so I dont expect the best results. However, for some strange reason , the macarons are passable and the shells, although not as tall or as full, still taste great. I added a little vanilla flavoring as well. Just came to say thank you and I'll definitely betrying to your recipe the right way soon lol . I forgot to mention that I got it from the macaron beginners group on facebook .

    Hello! I love your videos! Question....after piping the macarons and hitting them to get the air bubbles out how to you get the macarons on the correct side of the cookie sheet to bake them without messing them up?

    • @ShineeD
      @ShineeD  2 года назад

      Hi, Stephanie. I bake my macarons on the back side of the baking sheet, that's why I pipe the macarons on the flipped baking sheet. If you want to bake on the normal side of the baking sheet, you would pipe them on that side. Hope this makes sense.

      Hi, Eve. Thank you for reaching out. And I'm so happy my videos are helpful to you. Unfortunately, you can't reduce the sugar amount any lower than my recipe without compromising the look and texture of the shells. Sugar plays a huge role for texture and structure of the cookies.

    Thanks for the tips, I just baked a batch of macarons today and they looked perfect the outside
    But when I check the interior, I see the shell is hollow in some spot but most parts are full (of a single shell), I find it Abit strange, not sure what's going on. But as I piped, I notice there's bubble popping... I think this is the problem, I wonder if I've piped too close to the partchment paper or some other problems...
    I will try the tips next time
    Sorry for bothering but I have another question, how hard should the macarons shell be once done baking?
    When I break my macarons shell, the shell will collapse and stick to the "meat" inside, so it's harder to check if it's hollow. Is my macarons too soft?
    Also, after baking I shake the macarons shell, I only take it out if it only wiggles abit. Should I take it out only if it doesn't wiggle at all ? But I scare it may be overcooked and browned

    • @ShineeD
      @ShineeD  2 года назад +1

      Hi there! So your macarons may be slightly underbaked, but it's hard for me to say for sure, as I'm not there myself. Also I'd advise you to work on your meringue technique. Your meringue seems to have uneven air pockets and sticky macarons sometimes are due to a weak meringue.
      I take out macarons when they have little barely noticeable wiggle. Also, I prefer to over-bake (not browned!) than underbake my macarons.

      So glad you find my videos helpful! Thank you for your feedback. I find baking the macarons on back side of the baking sheet helps with air circulation in my oven in my studio kitchen. However, in my home kitchen it’s better on the regular side. It’s worth the experiment.
