@@Mabbdaa He actually did use puff pastry and must've forgotten to edit that part in. The crepe is used between meat and the pastry so that the pastry stays crispy all throughout, he talked about this technique in other videos 🙂

@@Blithmmm it literally isn’t, the beef is undercooked, probably to 115 instead of 125. The pastry is over cooked and too dark, meaning his oven was too hot.
Wrap using the clingfilm and chill to hold shape then wrap with pastry once the shape has firmed up in the fridge, this will make it look round. Also egg wash your pastry and cut in a design
We tried to make beef wellington once. We bought the wrong puff pastry though so we had to make tons of small beef wellington's for each person. They were super good though

Just remember to coat the crepes with egg yolk/egg wash at the end. You don't have to use crepes by the way, most of the time puff pastry is used,
