Googled Gooseberry jam and found this, thanks heaps. We pick them in Dec/Jan in Aus. Its a jam I remember from my childhood and I managed to find some plants a few years ago, first picking and jam coming up in the next week or so. Cant wait!!
Hi Claire, I made red gooseberry jam with gooseberrys picked from my allotment. I do not think it has set properly, As I had put most of the sugar in I tasted it and it was so sweet. Therefore I left the last little bit out, so I am guessing thats why it did not set. I done the crinkle test you suggested. I have four jars which really tasty jam. It was not at point it was not unsavable. I still have some gosberrys on the bush so might give it another go. Thank for sharing this video
Hi I made last year with 1kg of fruit & sugar and the jam was too sticky/sweet for my taste and the jam was thick & a bit sticky with a reddish hue. Perhaps the berries were too ripe? How can I make sure the jam is looser or less sticky and more tart taste? The lemon juice I did not add last year and perhaps this is the key ingredient. Good video tutorial & thanks for uploading.
Don't boil the jam for as long. The longer it boils for the thicker and stickier the jam becomes. Boil for 5 minutes, then turn off the jam while you test, then if it's not set enough, boil for another 5 minutes and so on until you get to the consistency you like. If you find the jam is too sweet for you liking, then use a little less sugar.
I've been watching your videos from Italy where after a year of house restoration I have my orto up and growing lots of veggies. I've seen many nRUclips videos but yours are the best, I love them.

Growing pretty much the same but outside, obviously courgettes, chillies and tomatoes. Aubergines have done well thus far and I'm growing cauliflowers and broccoli for the first time. Everything seems to grow to twice the size, my pumpkins are like an outrageous science experiment. Having a bash at fennel this year too. Broad beans were very successful but the winner in the most fruiting award this year has to be cucumber. One seed from a pack from B&Q planted outside and left to scramble over the ground has yielded around 3, 10" monsters a day for the past 4 weeks.
***** I've not grown Aubergines this year, will grow again next year though. Wow those Cucumbers are amazing!! It's been a good year in the UK also, but sounds like you've had a brilliant year also. Now we're in full harvesting time. All that hard work is paying off.
Yes the little black things are the seeds, but they're very soft so they don't need to be strained off. They may get stuck in your teeth, but that's not happened to me ...yet anyway.
Good point! I ate a huge green gooseberry yesterday, and was surprised how sweet it was! Must pick them this weekend. Usually when I say this, some critter comes along and demolishes the crop within minutes.
+Ruby Gray We have parakeets in our area and they've been known to strip our fruit bushes before. Hope you managed to harvest them all and make something tasty.
How long would you say this jam would last in storage? I may make this as a surprise for someone who is away who loves gooseberries, and have them come home to quite a few jars of them ^.^
+William Webb If you sterilise your jars and lids properly they at least a year. I've had Strawberry jam in storage for 2 years before and it was fine.
Noah Lewis-Halsey I don't see why not. There is plenty of pectin in Gooseberries so the setting of the jam shouldn't be a problem. If it is, just add a bit of lemon juice.
Claire, do you water-bath can the jam for long term storage, or is it simply so good that it will all get eaten right away anyhow? Just wondering what you meant by "jar it up"? BTW, love the term "Scrummy"...never hear it before, but think I'll start putting it to good use :)
+Greg Lutz There are many ways that you can sterilise your jam jars. My mu used to wash them in hot soapy water and then put them in the oven. "Jar it up" means "put the jam in the jars". Our family has lots of strange words that we use, I'm sure you'll hear more of them in time.

Get a life loser. It's her home...she'll be eating the product between her and her family so it's not going to be a big deal if she loses a hair in it. IF she were commercializing the jams, different story. Because you seem to have so much time on your hands to criticize others about their appearance, let's see what you look like in a "hot working environment" and them post it to you tube. Some gooseberries are sweeter than other. As long as you got the crinkle, then it should be set.

Yes it should work. They are very high in pectin so should set fine.

Yes the little black things are the seeds, but they're very soft so they don't need to be strained off. They may get stuck in your teeth, but that's not happened to me ...yet anyway.

It will give a darker colour to the jam. Possibly you'll need to add a bit less, but it'll depend on how sweet your fruit is.

How do you get Gosseberries that BIG mine are always tiny
The bushes are about 10 years old. I feed them with Shropshire Seaweed Fertiliser and give them some well rotted manure at the end of every season.
I missed it but when do you add the lemon?
Put the juice of half the lemon in right at the beginning, just before you pour in the gooseberries.
