    3:36 when I make chilli garlic tomato chutney, I put a little mustard oil too while mixing and boy does it taste heavenly 🤤

    Bengali style: plain roased brinjal with roasted tomato(optional), onion ( diced), sliced green chilli, salt. Mix all ingredients with mustard oil and serve with hot rice. Oufffff ! Just heaven.

    1st chutney we call tamatar poda(roasted tomato) in odisha... It is a regular authentic side dish of odisha we use to eat with pakhala(watery rice)..

    I think you should poke the chillies before roasting. Otherwise there are some chances it might burst.

    Hi , I am from Maharashtra . My aaji ( in marathi we call grandma as aaji ) used to make similar chutneys but by burning vegetables in chul ( in hindi chulha ) and it tastes hundred times delicious than the gas stove .,☺️

    what you call eggplant chutney is called bharta in our village. we add mastard oil to it, rather than tampering it with anything.

    This is how we do it in Nagaland too. The traditional way out here. However, our's don't get charred like that even if we roast them. You need to be v skilled to avoid that 😁

    Old traditional village style of chutney it's given different style of taste suitable side's of chapati rotti rice with small quantity ghee added this given extraordinary delicious taste

    Is it possible that some of these are known as chokha? In the Caribbean (Suriname, Guyana, Trinidad) some of these recipes traveled along with indentured labourers.

    You should use small sized tomatoes rather than big ones as small one makes chutney more tastier

      They'll be burnt. The inner part should be cooked without burning.

    Yummy looking, but I shud warn you that such charred food can predispose to unwanted growth in the stomach especially for those with a family history, so be cautious to remove the charred skin fully....
