    Bengali style: plain roased brinjal with roasted tomato(optional), onion ( diced), sliced green chilli, salt. Mix all ingredients with mustard oil and serve with hot rice. Oufffff ! Just heaven.

    I think you should poke the chillies before roasting. Otherwise there are some chances it might burst.

    1st chutney we call tamatar poda(roasted tomato) in odisha... It is a regular authentic side dish of odisha we use to eat with pakhala(watery rice)..

    what you call eggplant chutney is called bharta in our village. we add mastard oil to it, rather than tampering it with anything.

    Hi , I am from Maharashtra . My aaji ( in marathi we call grandma as aaji ) used to make similar chutneys but by burning vegetables in chul ( in hindi chulha ) and it tastes hundred times delicious than the gas stove .,☺️

    This is how we do it in Nagaland too. The traditional way out here. However, our's don't get charred like that even if we roast them. You need to be v skilled to avoid that 😁
