    I love the tofu idea. I am just now having success with tofu. Thank you. Nice to meet you. I am 58. And Menopause hit me very hard. I am thin now but for a while through the pandemic I just succumbed to EVERY meno symptom and started to lose myself. Then two summers ago I started walking every day. I got my strength back and some of my agility back, and I'm off most medications. I will never go back to the Standard American Diet. I have a huge garden. Thank you for this. I will make the tofu immediately.
    I did go on a little Estrodoil when I just couldn't take it anymore. I work full time, and it was really starting to affect my life. It healed my sleep, my nightsweats, my hip and shoulder pain...I am 10 times better for it. I could go on and on. Thanks for listening.

    Hi Ellen! I’m here from the small RUclipsrs club! I’ve subscribed and really enjoyed this. I love broccoli! It’s one of my favorites, but I love veggies in general which I suppose is a good thing. Your spiralizer looks kinda like a bigger version of my apple peeler. Also, I have those gloves! My sister got me some because I’m always cutting myself. 🤣

      Exactly! There was a time in my life where I would bring vegetables home and they would find their way to the back of the refrigerator, and then I would find them a week or more later wilted and inedible. That’s why it’s so important to prep it when you get home. It really is the key to success, if you’re trying to lose weight or even maintain a healthy weight and just eat, healthy, prepping is the key.

      I’d like to call a component prepping. I can take any of these components and form them into a different meal and can probably make 10 different meals from the same components!

      @@JackieWolven Exactly! And sometimes it’s fun to try different things with the leftovers. For example, today, I took my leftover rice and put it in a bowl with some nutritional yeast and some onion powder, garlic salt, and smoked paprika, and I mixed it, wet my hands and then shaped it into balls. Then I air fried the rice balls at 375° for 12 minutes. They were absolutely scrumptious!

    Yummyyyyy! Everything looks delicious. And yes, prepping is SO important, something I don't do frequently enough. It feels like SUCH a sense of accomplishment when I do. And yes, then prepping meals is SO easy for the next several days. Thanks for the inspiration to get a move on some prepping for this week! I need to go to the store today.       Cabbage!!! I looove it, so I'm going to buy a nice organic head (or two) of cabbage and chop it for salad and/or veggie stirfry. And here's a weird thing about me that I'll share for funsies: The sound of chopping cabbage is sooooo satisfying. 🤷‍♀️😂❤

    Such a great video and very well done! Just subscribed to your channel and look forward to learning more from you. I love the fast forward music when you're cutting...reminds me of "Bewitched." I used to prep regularly but have "fallen off the wagon" lately so this video was a nice reminder. How often do you prep?

      @@travelingexpats welcome! I am so glad that you are here, and I love the bewitched reference. I would say that I prep twice a week definitely not more than that sometimes less depending on how much I prep each time. It’s a bit of a struggle to figure out how to keep it all in the refrigerator kind of kind of like a puzzle. But to me, it’s worth it because it’s fabulous to be able to open up the refrigerator, take out a bunch of containers, make a meal out of those containers, and then put those containers back in the refrigerator.it takes me far less time to do that and it does to actually prepare a whole recipe from start to finish.       @@Lifeinthewyldewest giving up meat is hard, for sure, when it’s what you’ve eaten your whole life. It helps to have a very strong idea of why you’d want to give it up. For me, I had really bad and persistent indigestion following a standard American diet. Plus I have a family history of heart disease and other chronic lifestyle diseases. And I wanted to avoid that fate. And I wanted to lose weight. So if you’re even contemplating it, think about what your why is. Let me know if you have any questions! Happy to help.

I could always try it out and see how I feel? I’m going to take in some more of your videos and see if I can be inspired to try something new.

    Is there a way to make the tofu without an air fryer?

      @@karenfabiano5980 yes! You can bake it in the oven. Try 350 degrees prob about 20 min. Let me know!

      @@ellenshealthykitchen I actually prepped some garden fresh tomatoes and peppers for canning when it gets cold outside. I just wash and core the tomatoes and throw them in a freezer bag. I wash and cut up the peppers and throw them in one too and then toss it all in the chest freezer.
