I usually watch /listen to videos later- when I’m chopping veggies, cooking, cleaning, washing my hair, hanging laundry, applying makeup, & so on . In the car I listen to music.

Everything looked delicious and made me so hungry. Luckily I had a meal ready. I made a Beyond Meatloaf w/ Mashed potatoes & garden salad ( shredded lettuce, tomato, cukes, onion, bell pepper, Balsamic vinegar)

Whatever falls off my tacos becomes a mini salad . I love salad. I can eat a huge dinner plate of leafy greens, tomatoes, different veggies, & beans depending on the flavor . Less dressing, more citrus, lots of herbs & spices . I only need 1tsp of actual dressing. The rest is soy or salsa or fresh citrus . I rotate Italian, Asian, Mexican, & so on . Sometimes add a little quinoa, chia , hemp , sesame, just depending on the flavor of the evening.
There’s definitely a big difference between vegan & “typical “ salads. Especially the sad little side ones at restaurants where it’s the only vegan option. I pack a little bag of tofu pieces, chickpeas,a little bit of vegan cheese, & extra veggies that aren’t lettuce.

My rescue beagle is an escape artist. She follows her nose. She’s getting better about not running out of the door, she greets us with a toy & tail wiggles.

Often times I can order a plain baked potato at a restaurant, & add salsa, pico & guacamole , because everyone else orders chips & salsa & guacamole for an appetizer. I spoon it out first & set it aside so it’s not contaminated with queso . I have an orange kitty named Queso .
