Bread:
That is a “dense” loaf. Because of the high fiber and low gluten of your flour, it is hard to get big fermentation bubbles. However, your loaf is healthier than white (refined flour) bread :)

It's so hard to watch our beloved pets get older. Mysak has been so loved and well cared for and lives in a beautiful home. The fact that you both treat all of your animals with this love and respect is so admirable. Hello. I’m glad I found your channel!! I live in Wisconsin in America. I like you idea of living I grow up as a child just the way you are doing. There were six children in my family. We all work in the field s and what ever needed to be don’t.

OMG !! For 50 years I have only eaten ‘natural’ bread. In Toronto, in the 1970’s, in the permanent Kensington Market there used to be a wonderful Jewish bakery. You could even buy a half or quarter of the huge 18” diameter bread. It makes my mouth water to recall all the wonderful rye breads we college students swooned over slathered ( thickly spread) with fresh butter and Tilsit cheese !!! Here in Central Vermont we probably have a dozen such bakeries and this week I shall get my first loaf of rye from a new home baker, Mark, who started another and home bakes only 28 loaves a week. Most pick their loaves up from his home but, due to my bad knee, he will kindly deliver mine, only a few minutes from his home.Seeing your freshly baked rye delights me.
Now, as a diabetic I have to limit my portions but still enjoy my passion for breads.
I prefer to watch you, than watch tv. It warms my heart!!!!

The bread looks great! You may not remember or even see it, but I'm watching from the 1st all the way through. You are doing an amazing job! All the progression takes time and yes, wonderful that you have family and friends that knows how to work!
You two are very sweet with your old dog. It can be a trying time to watch your dog get very old and know it is going to be sad some days!

Our black lab Jesse, had a lot of lumps that were just benign fatty lumps, these were considered normal for aging dog.
At the end, at 16, he had internal bleeding from a tumor on his spleen and there was nothing our love could do to make it go away, he was too old

'Citric acid' is absolutely right. If you look at the 'ingredients' on labels of ready-made food in England, you'll see the words very often. And by the way, a line of bricks or blocks at the same level is a 'course'. If you want to pick up brick-laying terminology in English, there are some excellent YT channels on that skill in English. Thanks for your videos. I love them. I love the way you leave the hesitant moments, the difficulties, the failures and the unfinished bits in. Thank you!

I became hungry for Rooster soup myself while watching your video because that still living rooster was crowing so loud over your speaking. Sour dough looks delicious- keep baking, practice makes perfect with bread.

Tastes so much better too.. I know what you mean with help on a homestead... it’s just me and my dog.. LOL. Lots of work but I love it. Hi there Tova & Mathius. I am on a "Lockdown bingewatch" (about halfway through your vlogs in 3 weeks !!) and i absolutely adore your vlogs. I stumbled across you guys while searching for "off the grid" living (something I will be heading off to do later this year). It's an amazing place you live and have created. Its magical. Thank you for allowing us into so many aspects of your lives. Oh, Mathius, your drone footage is incredible. Absolutely brilliant. Your building techniques are fantastic. Notes about your bread: it looks just like my favourite sour dough bread I usually buy at my bakery of choice and I try to make myself for an eternity but it refuses to turn out like I want it to be: enough moisture , with a wonderful crust and fantastic flavour. Basically just like your bread ( that was supposed to be a compliment from a German bread fanatic although I have no clue about Skandinavien bread ).
I love how you mention that you have no idea what you are doing. That is how I feel with things much of the time. But its totally normal with new things. I love that you guys persevere anyway, redo them or adapt as necessary. You are documenting real authentic life in the same way you are living it. You inspire me in my own gardening and food craft work. Bravo and thank you!
Been binge watching the last couple of days. Awesome filming and storie telling (reality telling ), that cellar i think is called Rootcellar, also I live in the Faroe Islands we dry the sheep meat we have most of the time without salt, just air dry with the ocational storm that bring salt from the water

My Swedish mother made rye bread every Christmas. She put molasses in it. It was sweet but not too sweet. Very delicious just with butter. I’m glad your sweet doggy is on the mend.

Talasbuan I believe my maternal Swedish great grandparents immigrated to the US in the 1800’s. My paternal grandmother came from Norway when she was 18 and married a Swede. Both of my parents were born in the US in the early 1900’s (and had me very late in life). 🙂. They have both passed away.

I do some sewing projects and crafty type projects and I'm mostly self taught....so I never know what I'm doing either! I'm ok with that though!
And whatever bread doesn't work ou just cut it up and make croutons to put up n your fresh salads!

My husband and did concrete work as well, we did all the work ourselves except the guy driving the cement truck. who didn't help us he had his own job that day. that was literally the hardest I have ever worked. i have new respect for guys who do this for a living.

Its really nice to have them close to us! Its gonna be a bit higher than the "normal" earth cellar, but it cant be too high bc then it can be hard to get the right amount of dirt on top of the roof. I guess we will see next year how high we are gonna make it :) Thank you so much!

Seeing you move the big rock reminded me that you're getting along without a tool that we consider essential for small farming. That is, the "come along" manual winch. Here in the USA eBay sellers get $50 for a true heavy duty 2-ton model. It is used for roofing, for pulling fence, to get a cow corpse on a sled, etc. All the heavy lifting jobs. Love you folks !!

I get so excited for you guys when I see a big jump in progress like this.
I know how frustrating it must be when things go slow.
But when even the regular daily chores are a lot of work, makes it hard to make progress on bigger projects.

I have a picture of my grandparents house with them in front of it using three poles like you have as a tripod lifting a large boulder out of there excavation for the house .that would of been in the early 1930’s and using pick and shovel and having a cart to lower it onto.

When I saw the “claw” device moving the boulder I swore it wouldn’t lift it. It kind of reminded me of an arcade claw game trying to pick up small stuffed animals.

I make bread every day. The bread sounds well baked, nice hollow thump. The holes are good for rye. If you keep it to 10% rye to 90% spelt or wheat you can get bigger holes. Also fermentation time up to 19 hours. Anyway your loaf looks very good. Congratulations!

@@Talasbuan Lyme disease is under control . But it has weakend my immune system and now I have an infected wound on my belly that I had have minor surgery on. Hope everybody is back to health on Talasbuan.

I am with you regarding modern processed food. They're more harmful than good. Better make your own if you could😂. Love your home made butter! I pay almost US $6 / lb for grassfed imported from Ireland. Bone broth is excellent. I pay US $5-6/lb for the bones org!!! Grass fed org free range eggs US $6/ dz. You're very blessed and have each other. It looks like a lot of hard work but you're worth it. Keep up with the good work ❤👍
Mathias, use a clay roaster lined with parchment paper to bake your bread in. It works very well...if your oven is really hot, dampen your clay roaster first before putting your bread in...
PS....Your bread looks great! Are you using a sour dough starter or just making plain bread? Nothing better in the world than fresh homemade creamery butter on fresh baked bread...unless of course...you’re going to add a slice of ham...

Addendum: Anyone else cringe when Mathias used his axe to cut cement blocks to size? Must be a very good axe!

When I saw you eating the bread with the butter, firstly I am jealous because it looks soo nice, secondly : stay with your adagio : " you can never have too much butter". Like you said before : "not bread with butter, but butter with bread!" The butter is better for you than the bread!

An idea for your small cellar....just dig out further on one side( if possible) and just build an addition... incorporate a door if needed and u can then make you cheese room without building in a new space....but when the foundation has set...and add a foundation for the addition....💓 Just thinking of you...love your show...I'm new to the channel...so in love with you both 💕 beautiful land and home

We thought about that but we dont want to move the cheeses or the milk through a cellar filled with veggies with dirt, so we have to have them side by side and a part :)

Yes! One of my favorite books! I can get stuck in it reading about different fermentations every time I look something up. I think I have talked about it in some video, don't remember :)

Admire you two so much. F you are unsure you seek help that’s great. I love sourdough bread with butter on the entire surface and fried n a pan. Nothing is better to me. I put butter on both sides. Cheese in the idle if you have some. Ha like dill pickles on mine too.
Big bricks wow never saw those before
Addsome butter on top of the bread as soon as it comes out of the oven. Lightly spread it around and you will get fantastic bread. Also cover it with a towel.

I learned on a different channel that if you wrap up your bread in a towel then the crust will stay soft.

I had almost all the nettles i needed, then we had some really windy day and some of them blew down and got eaten by the chickens..well welll..I Just cut them and make bundles, hang them somewhere to dry. Contains vitamins, minerals, magnesium and kalcium. Good to eat some for the chickens in the winter when they don't have other greens to eat :)

my sister inlaw gave me a great recipe of sliced potatoes baked in the oven with anchovies and cream? its so good. (we call that scalloped potatoes)

I seen something you have in one of your videos is pigs, You need to check in to ( one time feeding ) and how this works If you have pigs ( only feed them) and have your chickens in same place and don't feed them! they will eat what the pigs didn't disgust, So all the grain or corn you feed the pigs they chickens will eat it. I seen a farmer in Indiana do that with cow,pigs and chickens! The ONLY thing he feed was the cows and not counting the hay all he feed the cows was corn!! and a lot of corn The cow got big fast,the pigs eat what the cows didn't disgust and the chicken didn't! He said he saved hundred of dollars! by doing that just keep the cow lot small.
