I had a similar version to this and found the plastic body of the machine was not strong enough to keep the wheel true, there was always a wabble. So I gutted it and used the motor and put it in a stronger box. I've tried various sharpening machines and these softer stones are my favourites.

If you’d want to go beyond that, it could be definitely sharper. I suggest you can hand sharpen on a 3000 grit+ whetstone after using the machine for a even sharper knife. The company also makes a 6000 grit finishing stone. I’ve never tried that, but I assume that will result in a near mirror finish. If you don’t mind swapping out the stones that should be pretty handy too.

How hard is swapping the stones?
Just realized it is rated just for 100V power outlet. Might be a liability using it from European power outlet.
It comes with a key to unscrew the black cap in the center. Then the stone can be removed.

I don't measure my blade angle at all when I sharpen. So I don't know.

I think it will still be a pretty good alternative as you can get it with rougher/finer whetstones.
