Most Roman style pizzas are cooked around 700-750 degrees. But, flame cooking is more about the flame and working it. Just get your stone over 750 or so, even higher is fine, and drop that flame to medium or a little less before you launch a pizza and you'll get the results you want.

Not yet, but I know plenty have done it. I would definitely use the lowest flame setting.

Can you cover the roccbox entry way? It looses heat when its open
Yes, they are sold online, but my oven keeps heat when flame is on.
