- This classic cheesecake is one of the best desserts ever, rich and decadent. Hardly can anyone stop to one slice.

Ingredients
Makes about 10-12 servings
Crust
9 oz (250 g) digestive biscuits or graham crackers
6 tbsp (80 g) unsalted butter, melted
Cream Cheese Filling
2 pounds ( 1kg) cream cheese, room temperature
1 cup (240g) sour cream
1 cup (200g) sugar
1 tsp (5g) vanilla
5 eggs, room temperature
1 tbsp (8g) cornstarch
pinch of salt
lemon zest from 1 lemon
1. Prepare the crust. Preheat oven to 350 F (180C). Crush the biscuits/crackers using a food processor until crumbs form.Pour the melted butter over the crumbs. Process until evenly moistened. Press the crumbs mixture with the back of the spoon into the bottom of a 10-inch (26 cm) springform pan (with a removable base). Bake for 13-15 minutes. Set aside to cool completely.
2. Reduce oven temperature to 300F (150C).
3. Prepare the cream cheese filling. In a large bowl mix the cream cheese until smooth. Add sugar, cornstarch and salt and mix until combined.
4. Add eggs one at a time until each egg is incorporated. Add vanilla extract, lemon zest and sour cream. Mix until well combined. Try to not overmix the batter to incorporate as little air as possible.
5. Pour the cream cheese mixture over the prepared crust.
6. Bake for 45-55 minutes. Turn off the heat and leave it another hour in the oven.
7. Remove and run a sharp knife around the inside edge of the pan. Let it cool completely at room temperature. Cover and refrigerate overnight.
8. Decorate with your favorite fruits and dust with powdered sugar if desired before serving.

hi. thanks for sharing this video. i've been following instructions from other tutorials on how to make cheesecake but this one was the best. but at first i baked it at 150 for 1 hour and put it in the fridge overnight but still very liquidy so i baked it again for 180 for 1 hour and it turned out just like whats on your video.. im definitely gonna do it again very decadent

If you don't find sour cream you can use a cup of Greek yogurt instead and it tastes DELICIOUS! This is the best recipe I've tried

Blossom Wallace I was looking for a plain cheesecake recipe. Therefore, I skipped the lemon and salt. Besides that I added everything as this recipe shows including the sour cream. I put it in the fridge over night until the next day (about 14 hours or more.) The taste was somewhat stronger than supermarket's cheesecakes just like I wanted it. You can taste the cream cheese more.

I made this .1st time baking 4me..b 64 soon... .i followed all directions fully .tastes great .ma liked also.used 9 in pan .will get 10 so its bigger n more to eat....cut in slices n froze some n ate today .still tastes great .thk u .will also make choc cheesecakes .brownies etc .i wana bake

+Carol Johnson Cracking cheesecake is really more of a cooking issue, not a recipe one. Lower temp, less time, no cracking. Or yes, the slow come down in the oven is good too!

My cake is in the oven. The corn starch settled at the base of my utensil Idk why. Didn't really combine with the batter.
Marzia Rizvi i mixed the cornflour with the sugar first. then added to the batter.
I tried this recipe my batter was a bit runny so I baked it for almost 2 hours...refrigerated for more than 12 hours...and it came out perfect...it was my first time baking a cheesecake and was delish

What's the big deal if the cake cracks? Does it affect the taste? I genuinely want to know. I've seen a bunch of people giving tips to make a crack free cheesecake as if it's the end of the world if it cracks. ._.

i made your cheesecake and it was so jummy. no crack in the middle, i only recommend to use more butter for the crust, because it was very crumbly. but i like the recipe

Cake turned out looking fantastic. Actually it's very similar to the one I make. You made it look easy which it is. Most people think making cheesecake is difficult when it doesn't need to be. Also the music you use for this vid was superb!!!!

For a reason my cheesecake cracked a little on the top and in the corners it was a little higher than the rest but beside from that it was so tasty. It feels light yet rich and creamy. Thank you so much. I will be using this recipe from now on! God bless you
