I just made it (substituted organic 3-year aged brown miso for the Huang Dou Jiang, mirin for the Tian Mian Jiang, regular soy sauce for dark; black pepper for white; used two red bell peppers and four dried cayennes). I've been making authentic Chinese food (e.g., my own dumpling wrappers, noodles, chili oil, pickles, etc.) for years and wondered whether Mandy was offering differentiating recipes. SHE IS! This is unlike anything I've ever made/had and is ABSOLUTELY DELICIOUS! At a time when many people are making videos that show "look how easily you can make something simple" I love how Mandy is demonstrating how to make something exceptional that takes some time and effort. I really appreciate that you link some of the harder to find ingredients to where we can buy them. I also ordered your wok on amazon which will arrive on Tuesday. I had been mulling over buying a wok for about a year, long before I ever saw your channel. I have some memory of a stainless steel wok with 2 wood handles back in the 80's that my parents had when I was a kid. Which was funny the only vaguely Chinese thing ever made was pepper steak stir fry, but we had one. I think it was a 70's and 80's thing in America, thanks to Yan Can Cook on PBS. We all had to have woks...just like now it seems we all must have instapots(I don't, such a rebel I am, lol). we're a silly bunch us American's when it comes to cooking equipment. I somehow got sucked into watching this channel in a binge watching one night and spent time thinking "great, now I'm hungry and want this...and that...and that...and that." and suddenly yes I must have a wok, not just mull over buying one for a year. Normally once I hit that stage of my decision making, I go buy it right then and there.But I held off when you were talking about your own wok you were designing and going to have available soon. So the last video you posted the link for someone else and I clicked it to put the wok in my cart for payday to roll around. Can't wait to leave you a 5 star review on Amazon. I admire your channel, your very thorough steps of cooking, the transcript and recipe, all your efforts at making fabulous looking food that I wish to try and make. That looks delicious! With pan fried you get the natural fats and flavors from the chicken thigh that you loose by batch deep frying. Yours is a far superior!

What an amazing dish and recipe! I really like the idea of cutting the chicken into smaller pieces exposing the flavors of the bones and marrow to enhance and infuse the taste of the completed dish! In Mexico, we used some really potent chiles as well, and if you open them from the stem side by cutting straight through, you can often remove the seed pod and go in with the filet knife to cut the "ribs" or "veins" out. That will take out a whole lot of spice and leave the wonderful flavours. Equally, you can use a chile Poblano, and then do the same with the seeds and veins as above. Thank you, Mandy. Great video! We had this today! Tres bien! I had to improvise because I didn't have access to all the ingredients, but it was indeed a "rice killer". I sub'd: fennel for anise, ground cinnamon for bark, jerez (vino generoso) for Chinese wine, and I didn't have the two specialty sauces, but it still was wonderful. Thanks again!
I made it with mostly the same ingredients +potato/cabbage. It turned out great! Just gotta watch out for those bones! I also peeled the skin off the chicken before cooking. Didn't change the flavor much and less hassle to pick off when it was time to chow down.
Got my wok this afternoon and am on my 4th "bake" on my Weber charcoal kettle. it's beginning to develop a nice patina. Very pleased with my purchase. Thanks Mandy

Jaggery Goor which is available from Indian supermarkets is a great option

I do have a couple of cleavers, but do I need a specific type to cut bone in chicken with?
Make sure you use a heavy duty one. Chicken bones are not that hard, you should be fine.
