A series of videos showing different species of fish biting different baits would be super cool and informative. The flounder footage Skinner did is great. It's probably a big challenge to do with some species. But we could all learn a lot. Maybe some cameras underwater on dock pilings would be cool, especially at night for snook.
I just recently started fishing and cannot set the hook on a flounder. I feel the multiple bangs and then try and nothing. I’m trying to learn what I’m doing wrong. Using live shrimp as bait on a jig head at one of the piers in the video

Sometimes you just gotta give flounder a little time to commit, patience is key. In my experience they don’t need a real hard hook set once they take the bait. Most of mine have been landed on soft plastic with appropriately sized hooks and they basically set themselves. When you feel it hit, stop and count to three, lift your rod tip and if you still feel weight then gently set the hook and put him in the bucket. You may be ripping the bait out of its mouth if you’re too hard and fast.
I don't know about flounder specifically but generally the bite is good just before a front then when it arrives the bite ends until the pressure goes up and the weather is better.
