Chef Stef Thank you so much Stephanie. I prepare meringue that way because I never have super fine sugar on hand and I rather do the double boiler than clean the food processor. It dissolve the sugar plus I find they whip better.
These are beautiful and am sure quite tasty! I usually use an organic sugar which is more granular than regular sugar. I'm assuming it would work just fine...I hope so. Am going to try it anyway! I love other suggestions here about different colors for other occasions...4th of July, Christmas, etc!

Haniela's turned out great. I live in Florida and it's summer for us with 100% humidity so the drying out process was hard. Especially on a few that I made a little too big. But when I keep the petal bunches a bit smaller, they are perfect.. Ziploc baggies worked great for keeping them dry once they were completely cooled. I will be making these again in other flavors. Thanks!
