What a cool video! Neat to see so many artists dedicated to their craft. There was a time that I couldn't imagine coffee could be so varied and complex outside of some auto drip folgers. The boundaries these folks are pushing are eye opening and entertaining. I'm planning a trip to NYC to see the WTC and I'm going to have to add Devocion to the agenda!

Hi Paul, Thanks for the request. There was a short clip in this video about that and I'll have more in the future. Till then, constant lower flow rates tend to increase bitterness which helps balance sweetness of milk. Every coffee will be different but in the clip in this video Danilo used the same coffee, same grind size and pulled shots at 7g/s and 5g/s. The 5g/s flow rate produced the shot more suitable for milk drinks while the 7g/s shot was better as a straight espresso. Marc
I like this channel a lot, recently subbed, after seen your comparisment videos i will ditch my Delonghi prima donna Elite and order a ECM SYNCHRONIKA, what is your advice for a grinder to go with that?
Hi TO, Thanks for subscribing and the question. The Synchronika is a top notch machine and a real beauty! My favorite prosumer level dual boiler machine. It deserve a capable grinder. I recommend a flat burr grinder with minimum 55mm burr size. Marc, love your channels content! Question for you, I bought a 270wi through WLL and looking to upgrade to the next level. I'm looking for a quieter grinder that also does ground by weight, but looking for one that's a bit quieter than the Baratza. Are there options out there that do this?
Hi f, Thanks for the question and your patronage! Sette grinders do a nice job but are a bit louder than most. There really no other grinders which grind by weight like the 270Wi. You might have a look at single dosing grinders. Weigh your beans first then grind with no retention. We've been working with the Eureka Oro Mignon single dose grinder and are impressed: www.wholelattelove.com/products/eureka-oro-mignon-single-dose-grinder-black It has large 65mm flat burrs, machine grade build quality and is much quieter than the Baratza.
