When I was a kiddie, whenever my mother brought me to work, she taught in the national high school in Cebu, we ate lumpia with a white sauce that I really liked. It's this white one. Thank you.

Yes you can. You allow them to cool. Wrap well in plastic (cling wrap) and then in foil. Keep refrigerated. The following day, steam for 2-3 minutes to make them pliable again. But I personally prefer to make them fresh. Less hassle. Less waste.

The combination of flour and cornstarch will give you the perfect texture for the lumpia wrapper in terms of taste and pliability. It also does not break easily when you wrap and roll.

If you make the wrapper ahead, you need to wrap it in a towel or cloth the following day and steam for 5-10 mins to warm it. The reason your wrappers are easily torn could be because they were too thick. Make it as thin as possible.. The thicker the wrapper, the less pliable it is. By the way, I do not like making the wrapper a day ahead. I like them made fresh.
I have not tried using self rising flour for lumpia wrapper. I think it will work but I am sure you can find plain flour there. That is all purpose flour.

You can get that consistency of the brown sauce if you use starch, just put enough not much so it won't get thicker...

Tanong po, sa wrapper gumamit kayo ng cornstarch at apf. Ano po texture pag may cornstarch kadalasan po kasi apf lang po gamit

hi chef, what if all purpose flour not available, they only have plain flour, self raising flour here.
I have not tried using self rising flour for lumpia wrapper. I think it will work but I am sure you can find plain flour there. That is all purpose flour.

Cassava starch is a form of modified starch and it does not become watery when cold. That is why I like using cassava starch.
