I read about this online. Apparently Bledel didn’t mention how much she didn’t like coffee until episode 3 or 4 of season 1, because she didn’t realize how frequently Rory would drink it. She asked if they could make hers coco cola, and the producers were all, “Of course, you’re one of the main characters!” Which really surprised her by how accommodating they were.
The one sad thing about the show is that they never tell one another "I LOVE YOU"❤. Its clear they do but why don't they say it; Rory to her grandparents, they to her and Lorelai, etc... 😢

It wouldn’t even be that much, like you really only see them sipping the coffee so I doubt it’s a lot she drank throughout the entire run.
i’ve noticed in some episodes the way they hold cups sometimes it seems like it’s completely empty
