不放鸡蛋是可以的,只不过鳞片状效果不会太好。Baking powder不用多加,多了会有涩味。
baking powder不健康,一般都是餐馆里面用,自己家不用也行。就是没那么juicy.开餐馆的都会用,一般家庭很少用。

油用多了就該換,健康的東西不要省,如果想把油清乾淨點可以試試太白粉伴水然後直接倒入已經使用過的油裡面。
謝謝觀看影片。不讓油黑得快,就是每炸完一次必須用比較密的虑網將油盡乾淨。的確,不妨用澱粉糊來油炸之后撈乾淨,可能會稍微乾淨一點。
油溫的控制,一般上會看氣泡的多寡,多炸几次觀察多了,自然就能判斷火候和油温了。
不想油这么快变黑就准备两窝油咯,油炸过两轮后就把它放一旁让它冷下来,然后再把干净的油捞出来,这样油就不会那么快变黑咯,做生意的人有些是这样弄的,虽然是麻烦点。
