Here's what I learned from reading David Thompson's book. Western food is based on portraying the flavor of the main ingredient, typically by cutting down the amount of ingredients or avoiding any overpowering flavoring. Thai food on the other hand uses a lot of very intense ingredients to achieve a delicate balance of flavors that define what that dish is supposed to taste like. The chef uses the words "sweet, sour and salty", so the balance of the flavoring agents (tamarind, fish sauce, sugar) is off, which means it's not pad thai. A western cook might think it's pad thai because the main ingredients (noodles, shrimp, bean sprouts etc) are there, but that's not what defines the dish.

Assuming that OP's comments are accurate, it's probably just a reflection of the degree of importance that each culture places on ingredients vs flavour. Eg: you can change the noodles, the type of sugar, and use different pastes, it will be Pad Thai so long as you achieve a similar balance of flavour and texture. On the other hand, traditional Western approach to cooking are more strict about the ingredients -- they'd care about whether there's egg or peanuts, or the type of noodles used.
The difference is this, this probably taste delicious but it's not pad thai they eating or they are used to, people who cooking in his show literally burn food, undercook or doing other unimaginable shit

He tosses his apron at Gordon, but he doesn't catch it. The whole restaurant sighs a heavy sigh of resignation and returns to their meals. And then the unthinkable happens. Gordon stands up, picks up the apron, and marches onto the line. With one confident wink and a stern glance, he says four words that return hope to the game: **where's the lamb sauce **
What I love is that Ramsey goes back to the footage and narrates the footage like any episode. Knowing he didn't pass this test, he is honest and knows that he can still learn from other cultures. While still a funny video, it is also a great moment to see Gordon is not really perfect like media makes him out to be. I've seen him fail a few other times as well.
As a south Asian who grew up hearing “eww your food smells” from bratty white kids, god bless Gordon and dearly departed Anthony. They truly respect other cultures. This clip is proof that Gordon has humility and respect.
I think the sugar was the kicker. I've made it a few times with white sugar like he did and it just doesn't taste right. Palm sugar is best and brown sugar works okay. Plus you need a metric ass load of lime compared to how it is served in the west, otherwise it doesn't taste like what you get in Thailand.

My girlfriend is thai and I'm a pro cook so I know how to make it pretty good and legit. Basically, if you dont have access to fresh tamarind to grind into paste, you can go to a asian market and buy tamarind paste. You start by boiling water and the tamarind paste about an equal ratio until it becomes a thick sauce. You than strain it, because the tamarind has a stringy pulp you dont want. Once you have your sauce (I typically use 2 cups of water and paste), you cook the sauce again. Adding soy sauce (1-3tsp about), about a quarter cup of coconut/palm sugar (crucial for the flavor), and than you can add your fish sauce (I'm vegan So I dont use it). Put all these ingredients to taste to your preference. One big secret is to toss your noodles in black soy sauce. Its awesome, because it firmly layers some really sweet and salty flavor into the noodle. From here, I simply sautee a little garlic and chili. Once sauteed I add my protein (typically tofu or seitan for me), cook, add your noodles, add your sauce. Boom. From here you serve it with chinese chive, peanut, dry chili, and mung bean sprouts on the side. Everytime I make this sauce, I'm able to make fresh pad thai, about 6 different orders worth. Infact I have noodles, pad thai sauce in my fridge now!

As other people have said - you're not gonna get anywhere as a chef thinking you're better than everyone else and know everything. When you have Asian dishes that add stuff like fish sauce or shrimp paste it's REALLY hard to get it right. It's going to ether taste bad or not authentic.
I think he actually was trying to hide the fact that he didn't like it which is why he made Gordon ask him a question instead of just saying it out right. He was trying not to embarrass him it felt like but there was no way around it.

I think the sugar was the kicker. I've made it a few times with white sugar like he did and it just doesn't taste right. Palm sugar is best and brown sugar works okay. Plus you need a metric ass load of lime compared to how it is served in the west, otherwise it doesn't taste like what you get in Thailand.

My girlfriend is thai and I'm a pro cook so I know how to make it pretty good and legit.
Basically, if you dont have access to fresh tamarind to grind into paste, you can go to a asian market and buy tamarind paste.
You start by boiling water and the tamarind paste about an equal ratio until it becomes a thick sauce. You than strain it, because the tamarind has a stringy pulp you dont want.
Once you have your sauce (I typically use 2 cups of water and paste), you cook the sauce again. Adding soy sauce (1-3tsp about), about a quarter cup of coconut/palm sugar (crucial for the flavor), and than you can add your fish sauce (I'm vegan So I dont use it). Put all these ingredients to taste to your preference.
One big secret is to toss your noodles in black soy sauce. Its awesome, because it firmly layers some really sweet and salty flavor into the noodle.
From here, I simply sautee a little garlic and chili. Once sauteed I add my protein (typically tofu or seitan for me), cook, add your noodles, add your sauce. Boom.
From here you serve it with chinese chive, peanut, dry chili, and mung bean sprouts on the side.
Everytime I make this sauce, I'm able to make fresh pad thai, about 6 different orders worth. Infact I have noodles, pad thai sauce in my fridge now!

As other people have said - you're not gonna get anywhere as a chef thinking you're better than everyone else and know everything. Also, no WAY Gordon would have lasted longer than a day in Marco Pierre White's kitchen if he had an attitude like that. Apparently he even made Gordon cry once. One of the hardest jobs in the world, I reckon.

When you have Asian dishes that add stuff like fish sauce or shrimp paste it's REALLY hard to get it right. It's going to ether taste bad or not authentic.
