      bharath kumar ramsay's cooking style is italian. That chef is a thai who cooks thai food. Gordon can cook more variety of dishes than him. He may be better in the thai dishes but that doesnt make him a better chef than Ramsay

    Here's what I learned from reading David Thompson's book. Western food is based on portraying the flavor of the main ingredient, typically by cutting down the amount of ingredients or avoiding any overpowering flavoring. Thai food on the other hand uses a lot of very intense ingredients to achieve a delicate balance of flavors that define what that dish is supposed to taste like. The chef uses the words "sweet, sour and salty", so the balance of the flavoring agents (tamarind, fish sauce, sugar) is off, which means it's not pad thai. A western cook might think it's pad thai because the main ingredients (noodles, shrimp, bean sprouts etc) are there, but that's not what defines the dish.

      @@attomicchicken that's a way exaggerated example you just gave. Assuming that OP's comments are accurate, it's probably just a reflection of the degree of importance that each culture places on ingredients vs flavour. Eg: you can change the noodles, the type of sugar, and use different pastes, it will be Pad Thai so long as you achieve a similar balance of flavour and texture.       Once again, those people signed up for the show. I don’t think you realize that in one of Ramsay’s restaurants, that’s how the chefs are treated. They’re expected to be the best of the best which is why the restaurants are considered the best of the best. Not every person has that quality, and Ramsay isn’t afraid to let them know.

    Mad respect for the chef being honest. Shows integrity to say: "what do you want to know from me?" With the knowledge that you are going to say something to someone that they may not like on their own show.

      Long ago, Gordon was the master in all culinary arts but when it was his turn to cook the Pad Thai, everything turned down hill.
      Gordon has disappeared from the culinary world for over a 100 years and now we need him more than ever

      "Hey Gord, will ya pass me that spatula," the boy said as he accidentally flung the utensil into the bleachers in a foul.
      Gordon picks up the spatula and frowns, "this old thing? i haven't held one of these in ages..."
      He tosses it back, with the casual grace of once renowned star of the game. From across the field the other cooks see what's happening. The ref calls a time out and the head chef runs into the stands, pleading for Gordon to step in and save the game. He tosses his apron at Gordon, but he doesn't catch it. The whole restaurant sighs a heavy sigh of resignation and returns to their meals. And then the unthinkable happens. Gordon stands up, picks up the apron, and marches onto the line. With one confident wink and a stern glance, he says four words that return hope to the game: **where's the lamb sauce **
