Middle Eats: How to make Clarified Butter and Simple Syrup
3 Middle Eastern Dessert Essentials - How to make Clarified Butter, Clotted Cream, and Simple Syrup

Ingredients:
These are the correct amounts for a 10" or 25cm round cake pan. For an 8" pan use half the ingredients, and for 6" use a third of the ingredients.
300g (10.5 oz) Konafa (Kataifi) pastry
120g (4.2 oz ) Samna/Ghee/Clarified Butter +15g (0.5 oz) for coating the tray
600g (21 oz) Melting Cheese (I used 400g buffalo mozzarella, 200g low moisture mozzarella)
Syrup:
170g (6 oz) Sugar
100g (3.4 fl oz) Water
1/2 Tbsp Lemon Juice
1tsp orange blossom

Directions:
To make the simple syrup or ghee, check out my Dessert Essentials video linked above
To prepare the cheese:
1- If using low moisture mozzarella, shred it on a grater
2- For fresh mozzarella, remove from brine, then dry with a paper towel
3- Dice into cubes, then place in a strainer to drain off excess liquid
4- Before using, dab this with a paper towel to remove any surface moisture
To prepare the Konafa:
1- Cut the konafa into sections about 1cm or 3/8" long
2- Place the konafa in a bowl, then melt the Samna/clarified butter and pour over
3- Massage the butter into the konafa until evenly coated
To Assemble:
1- Butter your cake pan with the remaining Samna
2- Lay the konafa into the cake pan making sure to get an even layer
3- Use something heavy to press the konafa down and compact it into the tray
4- Preaheat your oven to 200c (392f) and place the tray in there to bake for 15-20 minutes
5- Remove when the konafa is a golden colour and the sides have pulled away from the walls of the pan
6- Lay your cheese in the center of the konafa, leaving a small rim (1cm-3/8") from the edge of the pastry. Layer it low moisture mozzarella, fresh mozzarella, low moisture
7- Place this back in the oven to bake for another 15-20 minutes until the cheese fully melts
a. If water acccumulates, remove it from the oven and dab off any water, and you can add any extra Konafa dough ontop to absorb the liquid
8- Remove once the cheese is fully melted, but do not allow the cheese to brown
To Serve:
1- As soon as you remove it from the oven, grease a plate or tray and flip the konafa onto the tray
2- Pour over the simple syrup
3- Serve immediately Хобби

FINALLY a khunafa recipe!
For people who have never tried it: It actually tastes reaaaaaally good. You might think the cheese would be salty against the sugar, but if made correctly it is a perfect blend of creamy cheese with crispy kunefa, and a milky flavour with just enough sweetness.
It can also be made with cream cheese, so if you're a little sceptical about this you can try it that way too!

There's also a version we do in Egypt with a creamy custard like filling, and I made that on the channel last year.

I'm glad I tried out this dessert in Istanbul 3 hours before my flight (right before the Covid-19 thing started). Even though it was a shop near the bazaar and probably a little bit of a tourist trap, it still tasted good.
Later I almost jumped when I found there's "Kunefe" in Trader Joe's frozen section (US supermarket chain).

I just made this! In fact I’m eating it now as I type with a nice cup of tea. I was skeptical, but WOW! I did add a smidge of sugar to the dough and I only had fresh mozzarella. So I combined it with ricotta. I made individual portions in a muffin tin as this was an experiment for traveling with it. It all worked! I really enjoy your videos.
I have made it with mozzarella and ricotta and it is quite good. I am trying it today with mozzarella, rocotta and akkawi.

Come to Germany, we have large Turkish grocery stores where you’ll find almost everything that is used in Turkish/Arabic cuisine haha
Yeah the Turkish one is quite common here too. We have a great Turkish supermarket near the house which sells everything we need.
Now I better understand your struggles in bringing some of these recipes to us. This one had a challenge at every step, especially when lacking a Middle Eastern market. Well done.
Haha yeah it can be quite tough, especially when the ingredients are hard to find or common substitutes do not work. For some reason some people make it with ricotta too, but I don't think that is a good replacement at all. Thank you

I love this dish so so so much!! What I use instead of clarified butter (because it’s cheaper where I live) is mascarpone & the cheese I go for is pepperjack because I’m a sucker for the salty/sweet/spicy combo. I go as far as sprinkle just a bit of Malden salt on top with pistachios. Another great thing is if you’re doing it on the stovetop - to pour the simple syrup directly into the hot pan & kunefe, i love the bits of crispies that creates. Thank you for the baking alternative to this recipe!! It shall definitely be useful! Love your channel very much!
No way- hot spicy kunefa! I too love things with chillies and why not desserts? My friend had some salted chilli chocolate once. It was marvellous!

Oh my god, I have been looking for an easy to follow recipe for Kunafa for so long. This is perfect. Being in Southeast Asia, sourcing the pastry will be a challenge though, but I'm not kidding when I say that I think Kunafa is easily one of the best desserts in the world.
If you struggle to find it, then making it isn't so hard. Hope you really enjoy it and it satisfies all your cravings.

I had utterly divine knafeh at a bakery in Amman a few years ago, and also a very good one in Ramallah a bit later. As I've not been able to find any quite as good in the Arab markets or restaurants where I live, I'll try my hand at making it myself!

Woohoo, new recipe! Where did you get your low moisture mozzarella block in London? I have such a hard time finding it for my pizzas! I end up using kesar cheese from Turkey as a close substitute.
Thanks. The massive block was from Costco, you can get it at any large wholesaler too. Waitrose also have a Galvani low moisture fresh mozzarella which is fantastic. Hope you find them easily.
Wow, I might try this version. I am turkish and in our version of kunafa the cheese gets sandwiched between two layers of kadayıf. This version is probably better for cheese lovers like me 🥰

Gorgeous recipe. We put another layer of knafeh on top, and we don't flip it out, just serve the pieces from the pan. But either way, it's not to be missed...my favourite dessert from childhood.

Yeah at first it seems quite weird, but it's a neutral tasting cheese so it's not cheesy if you catch my drift.

If you want to get the orange color without using dyes you can add a bit of sugar to the dough along with the ghee. The sugar will caramelize and turn golden/orange when cooked.

The trader joe's version is probably the worst kunafa I have tasted.

There is also a sweeter version that is served cold
It uses qashta/qishta (قشطة) instead of cheese
Qishta is cream (sometime called sweet cream)
Would this make a good gift for my neighbor during ramadan if it's made in late morning? Will it hold up til after sunset? I assume it's meant to be eaten warm, right away. Am I wrong? Should I make something else for ramadan?
