A Drink For Vikings? Assassin's Creed Valhalla | How to Drink

- Ubisoft sponsored this episode and asked me to come up with a drink suitable for a Viking, they're thirsty folk! Check out Assassin's Creed Valhalla: ubi.li/wd9Kp today!
Let's talk about Vikings, who they were, what they did, where they lived, and importantly, what they drank. Firstly, "Vikings" are a specific group, or activity even, of Norse and Scandinavian peoples. One becomes a viking when they head off on an adventure to raid and conquest for money- basically they're pirates. The "Viking Age" runs from roughly the 800's-1200's and is a period of expansion and conquest from Scandinavia that is sort of the background to what we'd call "The Dark Ages". The Viking's drank well, frankly anything they could get their hands on, but they're commonly associated with mead. Mead is a fermented beverage that is probably the oldest fermented drink on Earth. It's made by fermenting honey into a drink about has strong as wine. It's sometimes called Honey Wine, or wine made from honey, but in my experience this annoys both wine drinkers and mead drinkers alike. The thing about mead is that even though Vikings prized it, it was expensive and rare stuff to lay hands on. It takes a lot of bees to make any quantity of mead, so it would be reserved for festivals and holidays, and the very wealthy. Mostly they drank ale, like, probably more than water. That's not to say they were rip-roaring drunk all the time, in fact there's a lot of viking prose about consuming in moderation, but low abv ales would often be safer than un-purified water. The ales common during the viking would have certainly been ales and not lagers, and they would typically rely on barley for a grain bill but could really involve just about anything as a fermentable or flavoring component.
So in building a "Viking Appropriate Cocktail" here, I'm keeping in mind all the things Vikings liked to drink, and had access to. I found a vodka brand called Barr Hill Vodka, it's vodka made from a pure honey mash. Now, they call this stuff vodka, but it's got a lot more character than the typical vodka. It retains a lot of the honey flavor, and frankly I'd be inclined to call it a honeyjack if not for it being self identified as a vodka. It's perfect for this drink. In addition to that I knew this drink needed some kind of a "fresh" component. Often you look for a citrus, but that was pretty rare to vikings, but they did love apples, particularly Golden Apples. Now, Golden Apples are a specific thing, they're not apples, they're quince. Quince are hugely popular and important in the middle ages, there's a lot of mythology that attributes special powers to them, and now you can buy them at whole foods. They're pretty dry though, they won't have much juice in them, but you can make a syrup from them.
Quince Syrup
• Dice two quince into fine matchsticks and weigh the result
• Combine with an equal weight of water
• And an equal weight of sugar
• (one part quince, one part water, one part sugar)
• Boil to dissolve sugar and reduce heat to simmer till quince turns soft
• Strain it, then pass the quince remains through a juicer
• combine the whole and strain and filter till it's mostly clear
The Horn of Eivorr
• One Part Quince Syrup
• Two Parts Barr Hill Vodka
• Four Parts Dansk Mjod Viking Blod
• Shake over cracked ice
• Pour unstrained into a drinking horn
• Skal!

To be fair, that's because if someone gets even a tiny bit too drunk you could get in serious trouble with the university. On campus accommodation is the worst for this, they barely allow drinking with friends, and for me this is in Australia where our drinking age is 18.

As somebody who has lived in Iceland his whole life, just a few miles away from where einstök is brewed, I applaud you for this episode.
Drinking horns are still a thing, even though it's rare, we used to have one which my brother handcrafted. Your pronounciations were not great but a hell of a lot better then most of what I have heard (Btw, most of what you said and the text you displayed on screen was Icelandic and not norwegian or old norse) All in all, great episode. Megi Óðinn vera með þér bróðir, drekk og ver glaður.
Translation: May Odin be with you brother; drink and be happy (thanks google).
To be fair, Iceland was pretty isolated for a really long time and thus the language didn't get influenced by other languages very much, unlike the rest of Scandinavia, so if we want to understand old Norse the closest place to start IS actually Icelandic. That's why it's not too weird that someone trying to speak old Norse without doing proper linguistic studies might end up basically speaking Icelandic instead.
Not to say that Icelandic = old Norse, because even on it's own a language will change and evolve, but it has done so slower and changed less than e.g. Swedish or Norwegian.
From Tennessee, einstök is delicious.

you do realize he is doing A LOT BETTER now than his early videos. his spill-porn was a thing lol
If you want a more historic viking taste you should try finnish sahti or norwegian maltbeer. Beer made with rye, barley or oats and then flavored with juniper instead of hops.
Sahti is delicious & primitive as Fawk.
Seconded - I also have to advertise for Norwegian farmhouse ale, which is part of the same family of brewing traditions. It's made with yeast strains very different from modern beer yeast, which adds unique flavours.
@@andersnygaard909 I haven't tasted that. But usually when people say "yeast strains very different from modern beer yeast" the taste is always "slightly banana-like". :)
@@fiendishrabbit8259 Right! And "unique" is often polite for "WTF" :) Tropical fruit-ish esters are common. But they're like dialects - each valley has a different one. Kveik from Voss has a citrusy hint, for example, and some don't have them at all.
Interesting. A beer without hops. Not big into hoppy beers, but a beer without hops sounds interesting.
"I could do an entire episode just detailing the different types of mead..." Please do.
As someone who makes his own mead I would love to see a h2d episode on just mead! Do it Greg!
Same
Making Meade isn't all that difficult. I'd like to hear about all the different types of Meade. Some use more botanicals, some a sweeter and some a quite dry. The first Meade that I made we refer to as Sahara Dry Meade. It has gotten better as it sits in the bottles and mellows. We also used it to make blackberry cordial. Good stuff.
Yes please. I've been making mead for about a year or so, easy as pie (well, actually significantly easier, except for the waiting) and very rewarding.
@@luella2u152 If you are on Reddit, r/mead has been a pretty good community for this
He already hearted a comment asking to make a mead episode. Your wish might just come true
They likely drank a lot of mulled ale/cider/wine. I know these aren't cocktails, but would love it if you did a video for mulling.
Holy shit, someone doing viking things without a horned helmet?? mad respect!
Still doing the weird animal skin cloak thing, and wearing women's broaches on it. Still, at least he got some things pretty close! His shirt is closer than not to accuracy in style for men. Although he did get the definition of Viking kinda wrong; it was a job title, not an actual people.
@@Asmusei yea.. A lot of people don't think of Vikings that way. There was an article recently that cited an old burial site where a Scottsman was buried (they did some DNA sequencing to identify the origin of the person) but they were buried as a Viking. They went on to say basically what you said. Anyone was able to become a Viking.
@@Asmusei how would men fasten their cloaks? Would they have been wool, then? I believe linen was a fairly common fabric at that time, but I can't imagine it being warm enough for a scandinavian winter.

I’ve honestly been watching It’s Always Sunny In Philadelphia so much that I heard “The Night Man Cometh intro” in the beginning
Though you used quince, it’s not a frugt tree that grows well in scandinavia... Actually never heard of it before, had to look it up!
Perhaps a berry syrup would be more appropriate, for example Black Currents which are native to Denmark and grow in the wild.
They are very sour, but vikings would have had access to them.
Bit late to respond, but unless Greg can buy currant syrup it would be impossible to make. Currants cannot be grown here due to ecological concerns since they are not native. Kind of interesting, kind of a frustration.

Hey Greg, Im a huge fan from Iceland and I love it when I see you use an Icelandic Beer, and you aren't far off with the pronunciation. Love the videos 😁
I see that bottle of La Fin Du Monde lurking in the background. Love all the beers from Unibroue.
I can't get enough . Love their Raftman .
Here in Denmark the mead makers are on the rise, with the whole new nordic.
Nordic people likes sour things, sour fish, sour candy and liquorice. You could use stuff like mead wort(probably hard to get?), sea-buckthorn or rosehip/beach rose. All of which would be very nordic to use.
All though i can see why you went with something sweet since the rest of the world watches this as well :)
No wonder i like sour candies! I guess I`m descended from vikings
Saw the bottle of Fin Du Monde on the shelf: Excellent choice.

Ah yes, the historian default answer of "what was this used for?":
For ritual purposes
The word "skål" is supposed to be pronounced like the "-o" in "go" or "low"!
I'd say it's closer to the o in more.
Skål (and your pronunciation critique) is correct for modern Danish, Norwegian, and Swedish, but if you’re going for viking authenticity, the Old Norse word was skál, pronounced closer to the way Greg pronounced it (and pronounced like scowl in Icelandic).
@@sethread8978 ok. Thanks. I'm of Scandinavian descent (Danish and Swedish) so I should know how to pronounce it! 🙂

I would love to see an extensive mead video! Thank you for checking out this tho. I always look forward to seeing a How to Drink vid notification.
My man Greg, I'm so glad you dived into the lore, and explained the difference between vikings and norseman. Thanks for doing honor to the culture.
I need a horn to drink from so I can show all my dinner guests that I am a fearsome and wealthy alcoholic, the likes of which even the Gods admire!
I'm super late on this response, but I have a possible lead if you're still looking: on Etsy or your search engine of choice, look for "Ragnar the Trader". Note that he's in Canada, and the price of shipping could be gulp-worthy because Canada Post sucks. But he does amazing work; I have two of his drinking horns, made from actual horn.
Thinking about it, I've only ever had Mead once. It was at the Maryland Renaissance Faire. Seems an idiosyncratic place to drink a proper pirate's brew...
Super simple to make at home, and store bought isn't bad either. I don't like that brand he used though, but that is because I don't like the taste of hops. It is a nice bottle to reuse though.
Vikings blod is hibiscus based isn't it? I always thought that was the off flavor I didn't like.
It's also not actually Vikings Blood Mead. That is a cherry mead.
It wasn't at all what I was expecting when I bought it. I didn't like it much either.
I agree with your distaste for that bottle of mead. And him saying that particular batch is a good baseline for a mead based cocktail was silly. Something like Caller mead would have been a better choice, as it’s practically just honey flavor.
@@____________838 I'm not familiar with this particular mead but I'll have to try and find some!
So I did some research. Technically that is a vikings blood recipe, however it's a 17th century recipe the recipe I use to make my mead dates to the 11th or 13th century. It's a much more accurate representation of what would have been drank by the vikings.
Oh please do an episode dedicated to mead! Love your work and love brewing mead

Mead was probaly brewed on barley, (after all different seeds have been used to make fermented things for way more than 10k years), sweetened with honey to remove as much as possible of the bot oxidized sourness from an open barrel brewing. Also spiced with hops, (you can grow it in Scandinavia today so even more probable a 1000 years ago when it was warm enough to grow grapes here). Also spiced with Skvattram, (Eng. Labrador Tea), Kvanne, (Eng. Garden Angelica, Holy ghost, Wild celery) and pors, (eng. Gale).
Most mead was low alcoholic and was used as an every day thing because it was way safer than water. There was also tales about "Good" mead used for different celebrations, weddings etc that was as strong as wine is today. To get to that high amount of alcohol they probaly used yeast from winemaking, (and modern day beer yeast wasn't invented until 500 years later).
So my guess is that you get close to mead with Honey sweetened Barley wine, spiced with Garden Angelica and/or Gale
I am freaking excited to be playing this later!
