Chicken inasal combine the soy sauce and lemon and chillies, then just deep the chicken into the mix sauce. Yes you're right that Halo Halo is more authentic than with the jellies on it.

That sides, the papaya ones, we call that atsara, it’s pickled papaya and usually side to chicken inasal, I’m from Bacolod, Philippines where the chicken inasal is originated, then you have the sauce, it’s supposed to be a mix of soy sauce, vinegar, chili, and since there are no calamansi (little limes mainly found in the Philippines) they might have replaced it with a slice of lemon, you dip a piece of chicken in it The bibingka is made of rice flour and coconut as just some of the ingredients, I can assume the had salted egg in it, as some just add cheese and they steam it, also fun fact they are served outside the churches during the 9 morning masses before Christmas called “simbang gabi”, they are pretty good with coffee or hot chocolate

You are correct with the halo-halo. It is not your typical crazy halo halo with the preserved beans and fruits. That one originated from the Province of Pampanga where they only add coconut (macapuno variety), flan, syrup-stewed saba bananas, ice and milk. Hence it is the puti (white) variant, which some people call Crema Halo Halo. :)

For chicken inasal, you have to mix the sauce with the lemon and the fresh chilis( you have to chop them)...to get the full experience..
