- Fresh Peach Pie
Shortbread Crust:
1 1/2 cups flour
1/2 tsp. Salt
1 1/2 Tbsp. Sugar or sweetener
1/2 cup oil
2 Tbsp. Milk
Peach filling:
1 small box Peach jello
1 small box Vanilla ‘cook & serve’ pudding mix
2 cups water
3 1/2-4 cups peeled sliced peaches
1 Tbsp. Sugar or sweetener, optional
Whipped topping
1. Preheat oven to 400 degrees
2. Mix crust ingredients together and press into bottom and up the sides of a pie dish. Mine is a 9 inch dish
3. Bake at 400 degrees for 15 minutes
4. Remove from oven and cool on a wire rack
5. Peel & slice 3 1/2-4 cups fresh peaches
6. Optional: stir in 1 Tbsp. Sugar or sweetener to prevent fruit from turning brown
7. In a saucepan, combine jello, pudding mix & water.
8. Cook & stir until mixture comes to a boil and thickens
9. Cool for about 10 minutes
10. Stir in peach slices and pour into crust.
11. Cool on rack until it can be placed in the refrigerator.
12. Cool completely and top with whipped topping.
