There are numerous recipes that call for heavy cream. I don't get it. I had my first steak diane back in 1972 prepared table side by a real life maitre d. He did not use heavy cream. He DID use brandy and dijon. Todd's version is not going to be very authentic.
For what its worth you don't need much produce to make these. So it should remain cheaper. Also Shallots are green onions in America i have been told. :)
Just made the sauce and it was sensational. I bought a really nice piece of beef and cooked it over charcoal. The sauce just topped it off. Thanks a lot.

No idea what Diane sauce is but it looks good. Here in the United States fresh produce is extremely expensive (no idea why) so most people would buy bottled sauce just because it would be more cost effective :(

It's not supposed to have cream. For a more authentic taste, look for Julia Child's recipe.
