রুটির দোকানের মতো পারফেক্ট ঝরঝরে আলুভাজি | Bangladeshi Aluvaji, Aloo Bhaji Recipe, Alu bhaja,potato

আসালামু আলাইকুম,
আজকের পর্বে আপনাদের জন্য নিয়ে এলাম রাস্তার পাশের হোটেল বা রুটির দোকানের মতো পারফেক্ট ঝরঝরে আলুভাজি | খুবই সহজ আর সাদামাটা একটা রেসিপি , উপকরণগুলোও খুব সাধারণ তবু স্বাদে অনন্য। আমাদের দেশের সকালের নাস্তায় রুটি-পরোটার সাথে অন্যতম এক অনুসঙ্গ।
এতো সহজ একটা খাবার অনেকসময় আমরা মনের মত করে বানাতে পারি না ছোট খাটো কিছু টেকনিক না জানার কারণে। চলুন তাহলে আজকে সেই সব খুঁটিনাটি জেনে বানিয়ে ফেলা যাক চমৎকার ঝরঝরে আলুভাজি।

উপকরণ :
ঝুরি করে কাটা আলু - ২ কাপ
তেল - ২+ ১/২ টেবিলচামচ
পাঁচফোড়ন - ১/২ চা চামচ
পেঁয়াজকুচি - ১/৪ কাপ
কাঁচামরিচ ফালি - ৪/৫ টি
লবন - ১ + ১/২ চা চামচ
হলুদ গুঁড়া - ১/২ চা চামচ
টিপস : চাইলে রান্নার শেষে ধনেপাতা কুচি দিতে পারেন। আর ফোরণের জন্য পাঁচফোড়নের বদলে কখনো শুধু জিরা, কখনো মৌরি বা কালোজিরা নিতে পারেন। এতে করে একই আলুভাজিতে মাঝেমধ্যে কিছুটা ভিন্নতা আনা যাবে। তবে আলুভাজি হলো শুধুই আলুর ভাজি এর সাথে অন্য কোনো সবজি না মেলানোই ভালো..তাহলে সেটা হবে মিক্সড সবজি ভাজি।
