Labskaus really is exactly as you described it. It is not gonna win any sort of beauty contest, but it is rich in flavour, but not overwhelming. Can be eaten on its own, or with egg or with fish or on bread (never tried that myself, but seen it more than once, so people apperently do that). EDIT: That "pannfish" actually looked really good. I am from northern germany, but i never tried (or even heard of) it. Need to change that.

Ha! For me as a German that was a delicious looking Matjes-Brötchen. It's all about what you're used to, I suppose. They are not always that salty, btw. There are "mild" versions that are advertised as such and I find them much nicer as well.

the Fischbrötchen you ate is popular in germany, yes. but that kind of preparing the fish is originally from the netherlands. this fish is raw and somehow fermented. the traditional, german type is the "sour" one that is basically pickled with onions and stuff in vinegar/sugar-mixture. (you also find that kind of fish sometimes wrapped around a piece of pickled cucumber called "Rollmops") at both of these herrings it depends on the recipe on how salty, sour/sweet the fish is. you should definently have tried the shrimp bread. these "Krabbenbrötchen" are super delicious cause the shrimps caught in germany have a unique and really great flavour. you can already tell it by the dark color. it's sweeter and more flavourful compared to other shrimps. hope you had a good time in germany and i really like how you always try to eat some local food. especially it's great that you are not afraid of trying some new stuff and tasting it. like you saw on the labskaus, often things taste delicious even when they don't look that great or appetizing ;) greetings!

I come from northern germany and sometimes despair that all yoyu see on youtube seem s to be food from Bavaria with sometimes a bit form 'Schwaben' (Part of Baden Würtenberg) + maybe some Döner, Currywurst and Bratwurst added. There are many many traditional dishes. Some more known, some less. 1. Birnen, Bohnen und Speck ( Pears, Beans and (cooked) Bacon) 2. Hamburger Fishsuppe (Hamburg Fishsoup, I think it showed up shortley in your video.) 3. The Pannfisch ( Pan-fish, exist in many variations. Hamburg has it with a mustard sauce. Its not realy simple mustard but a roux flavored with mustard.) 4. the fish you had (a hering) is specialy prepared (matured), it is produced from the Netherlands up to Denmark I as far as i know, maybe even Sweden. Describing how it is done would be a topic for a long video. 5. You realy missed out on the shrimp -Brötchen. The shrimp you saw they are native to the costal waters of the Netherlands and norhtern Germany. They taste diffrent to what you are used to. Unluckily new EU-Regulation and the way the industrie for processing them now works, the quality has declined a bit in recent years. The shrimps are still the same, but it takes to long from water to selling. 6. The Labskaus. Yes simplifyed you can get a good aproximation with mashed potatoes and corned beef. The better variations use special prepared meats and can be relay a pain to prepare. 7. ... I only added one new entry above, the others are mor comments on what you tried. There are Sprotten, Bauernfrühstück (scrambled eggs with potatoes, bacon, ...), diverse Krabben (the small shrimps) dishes, diffrent type of fish-soups , Grützwurst (A Sousage composed of meat adn grain that you break, fry and eat with pickles and an egg sunny side up), ... (Reading all the above rambling: Maybe I should start a vlog for the lesser known german foods and ho to prepare them.)

The bavarian food is great but Germany is more than bavaria but here there finally is someone showing my favourite side of Germany.

Visited it three times in the past, cause my aunt and uncle living close to it in lafayette. Fantastic video. Fischbroetchen are some of my favorite foods when you walk around Hamburg, but my favorite ones are either the smoked Salmon, Bismark (with a vinegar taste) or fried fish Frikadelle (fishburger). Amazing Asian, Portuguese and Spanish food in Hamburg. You would have loved a dessert called Rote Gruetze (which is a sweet fruit dessert with fresh vanilla sauce). Continue with your great videos.

Next time when you are coming to Hamburg you should also visit the Portuguese quarter next to the harbour. Having a Galão and a toasted portuguese croissant while sitting outside and watching people passing by is such a huge part of our culture.

The corn beef dish is very similar to a dish we have in Scotland called corn beef hash except we don't have eggs with it but it's not unusual to have beetroot with it. We also do the same thing with beef and this is called stovies

You girl are a breath of fresh air. I just discovered you tonite and have watched a few of your videos. What I liked about your videos compared with a at least 3 married couples that are travel and food bloggers that I’d been watching is that in each place you went you were determined to eat food from that area , even when you were REALLY TEMPTED to eat something you would’ve preferred and was a lot more familiar to you (maybe dim sum? I don’t remember) you kept up your search for the local food. Honestly I was so disgusted with one couple because they are in the middle of Paris eating a hambuger at a food truck. They constantly turn their noses up at food that is the slightest bit unusual to them. I mean, why call yourself a food blogger. Plus I think I’m going to enjoy watching a girl out on her own doing her own thing for a change! Can’t wait to check out more of your vids!!!
You mean "maatjes"? A mat is something else. Like, the cat is sitting on the mat. "Een maatje haring" translates as "one unit of gutted, filleted, and salted/pickled herring". Maatjes is the plural form of maatje.
Michael Preikszas as far as I know Matjes is the name for a young Hering. I prefer the Matjes from Russian stores like Mix Markt or Grand. It's less salty and sour

Nice vlog! The herring is a bit of acquired taste, like kimchi would be for Europeans. However, it's a very hallmark N/W European taste. Fried battered fish has a more universal taste, but that makes it also a little boring.

youtube algorhythmus as it best again ... i live like 10 mins on foot of the central station to bad could have showed you around some :) labskaus yeye everyone who see it thinks thats looks like it was eaten before and it cant taste good and after they tried they love it :) there are some seaasonal dishes that are really good but if you are not in season you cant really get them like green cabbage , aspergus etc too bad you didnt try birnen bohnen und speck ( pears beans and backon ) in hamburg the cusine is often sweet and salty ( traditionally ) great video

Bremen and Hamburg :D not everyone like it tho. fishbun .. i like bismarkhering the most .. its almost raw fish :D it even has its fins still. the fish is not baked or fried. the Matjes fish is made with enzymes of the fishes belly and salt :)

I love the Fishbroetchen with Bismarck herring (the other kind you mentioned) not the kind you had. They are not as salty.
