Does a deflector plate make a difference on my convection smoker?

    I would be interested to see if it affects your temperature maintaining while blowing at the probe and if it's blowing any of it straight out the smokestack. On mine unit I drilled a weep hole just below your blade deflector there cuz mine was collecting a lot of black condensation soot juice and dripping out the backside to the floor. I figure at least if it's weeping on the inside then it can come out the normal drain.

    To me, that seems like dirty smoke. When I use my smoker, I have almost no visible smoke, it's blueish clear. You can barely see it. Any time I have had that white color smoke, it has a funky flavor. Hotter fire box but maybe smaller fire box. Overall, the smoker temp is lower, but the fire box being smaller, running hotter, the smoke comes off cleaner. Fully catylizing the fuel leaving you with the wood aromatics in the smoker.
