This time the master Francesco of the historic pizzeria in Rome "Ivo a Trastevere" shows us how he prepares his dough in this very famous pizzeria.

Francesco has been working here as a pizza chef since he was a boy, he started at 15, and the other pizza chef colleague Fernando has also been working here for 38 years!
Artisans like these are a heritage and I believe that their pizzas should also be appreciated for the history behind them. And here is the passion of a lifetime.

I would like to add that the pizza chefs of this pizzeria learned their trade directly from Ivo, the person who opened this pizzeria in the heart of Trastevere in 1962.

In meinen Augen die beste römische Pizza. Nichts kommt an diese Margherita Pizza heran. Diese Pizzeria hat mir die Liebe zur dünnen Pizza beigebracht. Nur wenige Straßen entfernt lernte ich meine Frau kennen. Ivo ist und bleibt ein zu Hause. I love it. Erst zu ivo und dann zu Marcello in die Bar san Callisto.
Pizza is what is served in Heaven. 3 times a day 7 days a week. Bravo Francesco!

It always amazes me how the dough balls all look equal in size. I liked seeing the old photos and the interior of the restaurant, really nice, not to mention the closeups of that delicious looking pizza!

The reason I want to know how to make Authentic Pizza Dough... is one I am part Italian... (D'Alessio) and I am getting ready to move back to Albuquerque, New Mexico (USA) to RE-Open my Acting Studio (stage performances) and this time we will have Mystery Dinner Theatre!!!
The ONE thing I must have EVERY Week at the Dinner Theatre is "Authentic" Pizza... that we can be proud of to serve with the Acting Students...
Do you have a simple (smaller) recipe that you can share on how to make the greatest dough and tomato sauce?
I know I will never be anywhere as great as the Mastro here in this video... but I will try to Honor him... teaching my Acting Students to take pride from the old country....

Really a lot of hard work, and has to be quick. Impossible to make a great pizza without dedication and discipline.

industrial amount of salt. yeast is missing
Salt at 3.6% of flour is not crazy at all as most pizza contains between 2.5 to 3.5%. The yeast amount in the video was 10 grams per 25 kilos, which is extremely low. I am not sure how they got a rise being cold fermented for 24 hours.

Fresh Yeast or Dry Yeast? the video doesn't mention what type of yeast.
Just look at the video, that's FRESH yeast. In Italy dry yeast is an exception, we have fresh one available everywhere.

I grew up Italian in the US and ordered a pizza with garlic on it in Naples. They looked at me like I was crazy and put one tiny sliver right in the middle. But when I ordered my espresso with a lemon twist, the waiter cried “no, no!” And three of the chefs from the kitchen came out on the patio to look at us. They didn’t know what to do and gave me a big wedge.
My mother was from Ischia.
