- Flavour begins long before copper stills or oak barrels. Indeed it begins in the very land itself, in the way one treats one’s farm, nourishes one’s soil, the diet of nutrients on which barley is allowed to feast. That, to us, means Arcadian agriculture - beginning with organics.
Armed with a bottle of our Organic: Gaia’s 2nd vintage, Head Distiller Ned heads for the hills of County Wicklow to catch up with organic growers John and Marcella Mallick. They talk care for the land, the many (many, many) extra miles required by organic agriculture, and the natural flavours that these old ways imbue barley and thus whisky with. Yet another highly enjoyable and informative video. Been a fan of Waterford since tasting the Cuvée.
Have since purchased the Grattansbrook single farm expression.
Looking forward to a Waterford tasting at the The Wee Dram in Bakewell England, hosted by 2 Waterford representatives. Will we be tasting this latest organic offering?! Hope so.
Minor observation on video quality: music was quite loud, making understanding what was being said difficult.
