      No, you should never soak collagen casings. They come ready to stuff

    Are the sheep and pork casings the best for things like grill and eat items? What is best for a snack stick where you wouldn't want to peel it?

      We love a natural sheep casing snack stick! Collagen are easy to thread on your horn (no need to soak or find the ends) and give a lot of uniformity. You don't need to peel collagen either as they're edible.

      Larger diameter, 35-38mm hog casings

    I want to try making my own hot dogs. unlike most people, I am not a fan of the classic "snap". He mentioned that the sheep casings have the most tender bite of the natural casings, are the collogen ones even more tender? Or would they be tough and snappy?

      Collagen casings are tender and will still have a slight snap to them. Be mindful of the humidity in your smoker as low humidity can toughen your casings. We don't currently sell them, but another option would be cellulose casings, they're inedible casings that peel off before you eat them. More like an Oscar Meyer hot dog.

      Land gator sounds great, but he was referring to Landjaeger, a type of smoked sausage stick!
