    Nettle pesto recipe
    4 cups Cooked nettles
    1 cup olive oil
    1-2 tbsp sea salt
    1 tsp pepper
    2 cups roasted peanuts
    3-4 Garlic
    1 cup Parmesan cheese (Optional)
    1/4 cup Nettle stock
    1. Boil nettles for 3-5 mins
    2- Strain water from boiled nettles, set aside
    3. Roast peanuts, mix finely in food processor, season with salt, pepper, garlic and olive oil.
    4. Add nettle and mix everything together into fine paste.
    Obs - If the paste is too thick, add a little nettle stock.
    5. Keep pesto in a jar and store it in a fridge.

    Warnings
    Be sure to talk to your doctor before you try any new herb or supplement. Even all-natural foods and drinks like tea can cause allergic reactions or interact with certain medications. Some herbs and supplements can be harmful to people with certain health conditions.
    Potential Side Effects
    Consuming dried or cooked stinging nettle is generally safe. There are few, if any, side effects.
    However, be careful when handling fresh stinging nettle leaves, as their hair-like barbs can harm your skin.
    These barbs can inject an array of chemicals, such as (1, 2Trusted Source):
    Acetylcholine
    Histamine
    Serotonin
    Leukotrienes
    Formic acid
    These compounds can cause rashes, bumps, hives and itchiness.
    In rare cases, people may have a severe allergic reaction, which can be life-threatening.
    However, these chemicals diminish as the leaves are processed, meaning that you shouldn’t experience mouth or stomach irritation when eating dried or cooked stinging nettle (1).
    Pregnant women should avoid consuming stinging nettle because it may trigger uterine contractions, which can raise the risk of a miscarriage (40).
    Speak to your doctor before consuming stinging nettle if you’re taking one of the following:
    Blood thinners
    Blood pressure medication
    Diuretics (water pills)
    Diabetes medication
    Lithium
    Stinging nettle could interact with these medications. For instance, the plant’s potential diuretic effect may strengthen the impact of diuretics, which can raise your risk of dehydration.

    You can use Nutritional yeast instead of parmesan cheese in your pesto. It has got a cheesy taste and is used in vegan recipes.

    This was a great view I loved it and if you can go foraging for your food and everything like that besides going to the grocery store but anyway it's a great get away from the house and from the hustle and bustle of being around multiple people thank you for the video it was great

    Hi Estee, I just found your video for the first time and it’s so charming! I’m so happy to see your video and hear you talk about the same kind of things I care about with food. I happen to have a lot of stinging nettle popping up in my backyard right now. I live in San Francisco and it’s kind of damp here and I decided to try cooking it to eat it instead of throwing it away. Thank you for the great ideas! I hope you’re still making videos!

    Me too I have pollen allergy, once after I tried the nettle soup, I wanted to eat it again and again, I guess my body wanted to have stinging nettles.

    I reccomend whole grains. Often times people avoid foraging, becasue the oppurtunity cost is high in comparison to the amount of money saved.

    Please answer me cause I wanna make these beautiful recipes, the nettles plants I have are loaded with flowers.can I leave them on with the stem and use it whole or should I only use the leafs?

      I think when the nettle is flowering it is already too old - the leaves are too tough and fibrous and it deposits crystals in your kidneys. Use only the first growth of the year. Full of iron.

      You are right, I don't pick them when they are matured. I only pick them when they are young and tender.

    Also, when you boil then a lot of the nutrition is lost in the water. I recommend streaming the leaves instead.
