pam 8610 is best suited for 10 watt speakers but there is some hish noise issue present in this ic.otherwise go for tda 7265 or tpa 3110. they are a bit expensive though.7297 is also there which is cheap but only supports 8 ohm speakers.for portable application i recommend class d amp such as tpa 3110.
according to the datasheet it provides 25 watt at +-20 volts(8 ohm load) but THD is 10%. will provide 20watt at +-16 volts(4ohm load) THD is 1%. so its suitable for 20- 25 watt speaker.
pam 8403 is best for small application but if you need more power then go for either tda7265 or tpa3110.pam8610 does have hissing problem and tda7297 is good but not efficient.
Yes ,for single dc supply boards you can use single smps and for dual supply boards you can use two identical smps or a smps having dual voltage (+ve , _ve and ground)output but i recommend a transformer.

Go for pam8610 it has good sound quality on higher volume..use a 12v 3a trans..

Cant remove the hiss completely because the problem is with the chip itself but it can be reduced by using some passive components.
