I've been trying the "Julie and Julia" game, I make a Julia Child recipe every Saturday night. Something I noticed pretty quickly is, that she focuses on building flavour through proper cooking and technique (and yes, lol, a lot of butter)...but, she seasons food sparingly. Unlike a lot of Chefs of today...I noticed right away, how much better my food tasted. She has a point, seasoning/herbs etc are great, but you want to taste the food as the main flavour with the seasoning as an accent and not the other way around. She's just freaking brilliant, I have always been a huge fan. Such an outstanding life she lived.

I just love her passion and her focus. She’s not about the frills, fluff, and nonsense- she wants to make good food. And boy does she. And I love that she added lessons to all her cooking segments. Something like cutting an onion is something a lot of people don’t do right, or fast or with confidence. She’s the GOAT.
This is how I learned to cook. These videos and the book that came out a few years later changed my life for the better. Ask anyone who’s eaten at my house.
That's a mark of a true chef, when you can measure in the palm of your hand or straight from the bottle. She always encouraged her audience to learn how to do this.
I made her butter poached chicken and my family went crazy for it! They said it was the best chicken they ever had. I also made her famous potato and leek soup for a luncheon and everyone was super impressed, like I did some amazing thing! I certainly didn't tell them I threw some potatoes and leeks in a pot of water, LOLOL! It came out smooth as silk and delicious and everyone said it tasted like something they would have in a 5-star restaurant.
Butter poached chicken is absolutely divine! I couldn't beleived how good it was with a nice side of vegetables like mushrooms brocoli or sparagus and a little green salad. Of course dont Forget the french bread

I’ve made the first recipe, the sautéed chicken in the pan. Very good.
She never seems to season her meat and poultry before browning or cooking. Can't argue with her results though.

I made the butter poached breast. It was very nice but it did take longer than 8 minutes. Mine took about 12 minutes.
