Beans and rice is a complete protein as well as full of fiber and vitamins and minerals. If you have pintos that are too old to cook you can grind them to make flour for thickening or making tortillas. Also can be used to make your stored flour for bread, so never toss hard beans

Fry an egg, I like mine runny, the yolk tastes great oozing onto the rice and beans. Plate beans first, cover with rice, top with egg, salt the egg. I prefer jasmine rice.

I make a big batch of turkey taco filling with dark red kidney beans. I then freeze pint servings so I can grab one when in the mood for a taco salad. After defrosting, I'll toss some cheddar on top to melt while heating then toss with lettuce and top with crushed tortilla chips. The dressing varies, but often use salsa mixed with sour cream. Yum!
This is a salad I discovered in Greece in 1998: Fasolia Salata (Haricot Bean Salad) You can use cannellini or haricot beans. (I've successfully substituted other white beans.) Cook 2 hard-boiled eggs and quarter them. Soak and cook 8 oz. beans. Drain them just before serving. Combine them in a bowl with 3-4 peeled and sliced shallots, 3 Tbsp. chopped parsley, and 2-3 Tbsp. of the bean cooking liquid. Mix the dressing together (6-7 Tbsp. olive oil, juice of a lemon, salt and pepper) and toss with the bean mixture. Serve on a plate and garnish with black olives (as many as you like) and hard-boiled eggs.

Stack the bottes on their sides with the mouth pointing towards the fan in the back. Turn heat to high. Generally it takes about 20 minutes for them to be bone dry. Don't have to wait for 2 days while they air dry. If may be possible to rig up something with a hair dryer to help with the drying process. Perhaps laying a milk crate on it's side. Fill with bottles with the opening pointing out. Then use the dryer. Just warming the wet bottles, will help them dry faster.

Instead of wasting money on oxygen absorbers, I invested in a vacuum pump and a 5 gallon metal pail/with lid, to use as a vacuum chamber. Not I can vacuum seal any and all sizes of jars, using the vacuum chamber. And yes, I have vacuum sealed chocolate chips for over 8 years and they are just as fresh as the day I bought them.
Anasazi beans are my very favorite. My brother used to bring them to me from Colorado all the time I need to find someone going to Colorado well specifically Cortez area.
We have a wide array of beans we have stored and i prefer the mason jar method myself. It is easy and doesnt let anything in. We use a jar sealer contraption and it seems to keep them free of insects and the like. Thank you for sharing your knowledge on this topic

So I'd like to share with you an old Private, Christian School recipe as we did not have an official cafeteria. And, we, in my Religion of Seventh Day Adventist, Call them - Haystacks! And this delicious bean recipe is as follows - 1 layer of fritos or corn chips on a plate 1 layer of warmed Pinto or black beans Next top with shredded cheddar cheese Salsa, sliced black olives Avocado chunks or guacamole & sour cream. Also, shredded lettuce & fresh diced tomatoes. Eat right away & it's delicious & healthy!
We've tried to look into making bags that are the shape of the bucket. So far, the best we can devise is a bag with a gusset at the bottom, but there isn't any equipment in existence that can make a bag with a wide enough gusset. We're not giving up, though! 🤞🏽
When I store in mason jars, I wait a few weeks till I have like 10 full after freeze drying food, I put all the jars in the freeze dryer on test mode for the vacuum. I leave it on for about 35 seconds and it’s the best seal you can get.

I love beans too,and never had them at a child,my momma just never bought or cooked a dry bean in her life.After getting married my husband and friends ,laughed at me when l said whats a pinto bean ?? I had some for the first time and loved them,and still do,refried beans ,bean dip,you nams it .
I love beans also! I am not as crazy about rice so am trying to cook other grains. I haven't been totally successful with millet. It never seems to get totally soft...even after soaking overnight. I am not sure if that is just the way it is.
For your long-term storage, do you freeze them first? I’ve started freezing my beans and my rice and then letting them come back to room temperature before storing them. I’ve heard there can sometimes be the critters that live inside and can destroy them. I heard you mention preventing that in the video but I wasn’t sure what you do to prevent it
One dried bean I would not keep would be kidney beans (which if undercooked can cause serious illness and even death) and if there's ever a time when you might be experiencing poor cooking techniques it's during a grid-down situation when you are stressed and in a hurry.

I have vacuum sealed beans in jars but also in the food saver bags. You did not mention the bag method, is it not an aceptable way to store beans? I've also used bags to vacuum seal chocolate chips too..... is that ok? Thank you, hoping that you will answer😊
Yes that is okay. Mylar works better for longer term storage because it does not allow for the permeation of oxygen through the plastic over time. However, if you aren't looking for a 25 year shelf life it is a great option.
Jonathan doesn't really like it because you kind of have to work with it to get it on right. He prefers to use an attachment for the regular vacuum sealer. I like this one because it is so fast to get out and use. Mine is still working.
The 5 gallon bucket full of beans, with 4 adults eating them every day. Would you guestimate how long one bucket would last the 4 adults, eating one meal per day ? Sorry i'm new to this
Welcome! It all depends. Are you serving with rice? You should calculate a 2000+ calorie diet for each person. Serving with rice creates a better protein and really helps with the caloric requirement. Look at the beans that you are wanting to store and calculate the calories. :)

I have never tried Anasazi beans, and I love beans! I would like to know where to get them. Also, how do you cook your beans in a pressure cooker? You say that you use an Instapot. I have a Cuisinart brand of electric pressure cooker and their instructions say to add oil when cooking beans to keep the foaming down. I’m trying to get away from using oils and fats and wondered what your experience is with cooking beans in the Instapot. One of my favorite recipes for beans is greens and beans, using mayocoba (or peruano) beans. They cook up so incredibly creamy. We grow these beans in addition to buying them - they are a pale yellow color. Recipe: 2 bunches of kale, destemmed and chopped Boil the kale for 5-8 minutes, drain. Less time for young tender kale, longer for tougher kale. 3 large cloves garlic, minced 1 TBSP fresh rosemary, minced 1/8-1/4 tsp crushed red pepper 1 cup well flavored broth - we like vegetable or chicken 1 can, or 2 cups, cooked beans WITH cooking liquid - any white beans are preferable, but our favorite is the mayocabo beans. Heat 1 TBSP olive oil in large skillet (or water) and saute the garlic, rosemary and crushed red pepper until fragrant, 1-2 minutes. Add the beans with their cooking liquid. Smash about half the beans into a gravy. Add the broth. Simmer for about 8-10 minutes, stir occasionally. Add the greens and heat through. There should be a nice bean gravy. If too dry, add water, too soupy, cook off some of the liquid. Adjust the saltiness to taste. This is also good with other greens - chard, beet greens, etc. I have made this with dried rosemary, too, but use about 1 tsp and crush it well; and garlic powder, about a half a tsp-1 tsp. I like garlic, so I err on the heavy side. This will be for tomorrow night’s dinner. 😊
@@audreysmith2557 I cook beans in the instant pot all the time. I set it for an Hour and 16 min. Add seasoning of your choice. You can add ham if you eat pork. Have never added oil, ever. Adobe milling in Dove Creek, Co is where Anasazi beans come from. Although I have heard people have it elsewhere and grow it by a different name. The Anasazi bean name is trademarked, but not the actual bean.
Anasazi beans are the ones I prefer to store and use I find they taste like pintos but slightly creamier and cook in half the time of regular pintos. Of course I should quantify that I don't use the soaking method I clean wash well and for a pound of beans 6 cups of water season to taste
Pinto ... Costco, Sam's Club or a hispanic market. You can get some bigger bags at WalMart or WinCo of black beans and pinto. Specialty beans are harder to find.

When I first started storing food I didn't have access to oxygen absorbers. Maybe that's what you saw? I always use oxygen absorbers now ... for like the last 15 years. You will get a slow transmission of oxygen over time through the plastic. However, the studies show that is VERY slow. YES! Use oxygen absorbers with dry goods except sugar, salt, and baking soda.
Ha! My husband could live off of beans, rice , and avocado and would be loving life! :) Me, I'm more like you Kylene and prefer them sparingly or mixed with other things in a soup, chili or taco meat.
Where do you get your Anasazi beans from? I can only get a one pound bag at IFA, when and if they have them. I use to pick them up directly from them in Dove Creek, Colorado as I drove through from visiting family in the Four Corners area. Family moved.
Idea!? Could you trim the bottom of a Mylar to round those corners, reseal with the hair straightener? Am I making sense. ? Make your own rounded Mylar bags to fit in buckets!
Not sure about freeze drying, but you can cook and then dehydrate them. A Purposeful Pantry is a dehydrating Chanel and website that is filled with info for this.
We freeze dry chili and some bean dishes but I personally wouldn't just do the beans. We cook them in an InstantPot and eat so many of them that it would be so much extra work. I think it would be a great idea to have some for a short term emergency. However, if that is best for your circumstances I'd do it.
Oxygen absorbers create an atmosphere with no oxygen. Bug have to have oxygen to live. We have never opened one of our food storage containers that was properly packaged that had bugs in them. We've seen quite a few from others who didn't do it correctly that had bugs.
I saved a bunch of plastic containers that I get cranberry juice from I cleaned them and put my beans in there, I need to put oxygen absorbers in tho. I dont want to deal with the glass you break it and there goes your beans
Another channel said that no matter what method you use to store beans, after 2 or 3 years they harden and become inedible, regardless of how long you cook them. Is that true in your experience?

I was watching someone. They said to save your old socks and put them over your glass jars. It helps to block the light and help with breakage.
We do that a lot.
I’ve wrapped foil up over jars whose contents needed to be kept dark. Granted, not as cheap or environmentally friendly as old socks, though.

I love beans too,and never had them at a child,my momma just never bought or cooked a dry bean in her life.After getting married my husband and friends ,laughed at me when l said whats a pinto bean ?? I had some for the first time and loved them,and still do,refried beans ,bean dip,you nams it .

I love beans also! I am not as crazy about rice so am trying to cook other grains. I haven't been totally successful with millet. It never seems to get totally soft...even after soaking overnight. I am not sure if that is just the way it is.
For your long-term storage, do you freeze them first? I’ve started freezing my beans and my rice and then letting them come back to room temperature before storing them. I’ve heard there can sometimes be the critters that live inside and can destroy them. I heard you mention preventing that in the video but I wasn’t sure what you do to prevent it
The oxygen absorber or vacuum seal removes oxygen from the container and kill the bugs. Do not need to freeze
One dried bean I would not keep would be kidney beans (which if undercooked can cause serious illness and even death) and if there's ever a time when you might be experiencing poor cooking techniques it's during a grid-down situation when you are stressed and in a hurry.

Both. I love glass but Mylar in a bucket is safer for long term storage because it won't break and is more light resistant.

if you are storing in glass or mylar bags does it make a difference if you are using a regular plastic can or does it really have to be food safe since it is already in a container?
As long as the food is in the glass or Mylar bag the tote or bucket plastic shouldn't matter.
I have vacuum sealed beans in jars but also in the food saver bags. You did not mention the bag method, is it not an aceptable way to store beans? I've also used bags to vacuum seal chocolate chips too..... is that ok? Thank you, hoping that you will answer😊
Yes that is okay. Mylar works better for longer term storage because it does not allow for the permeation of oxygen through the plastic over time. However, if you aren't looking for a 25 year shelf life it is a great option.
The M1 mason jar sealer had a lot of poor reviews on Amazon. Most said it stopped working right away or within a few months.
Jonathan doesn't really like it because you kind of have to work with it to get it on right. He prefers to use an attachment for the regular vacuum sealer. I like this one because it is so fast to get out and use. Mine is still working.
The 5 gallon bucket full of beans, with 4 adults eating them every day. Would you guestimate how long one bucket would last the 4 adults, eating one meal per day ? Sorry i'm new to this
Welcome! It all depends. Are you serving with rice? You should calculate a 2000+ calorie diet for each person. Serving with rice creates a better protein and really helps with the caloric requirement. Look at the beans that you are wanting to store and calculate the calories. :)
My husband and I probably grew those Anasazi Beans!! 🫘 we farm 2300 acres. If you know where those beans come from you will know why.

I have never tried Anasazi beans, and I love beans! I would like to know where to get them. Also, how do you cook your beans in a pressure cooker? You say that you use an Instapot. I have a Cuisinart brand of electric pressure cooker and their instructions say to add oil when cooking beans to keep the foaming down. I’m trying to get away from using oils and fats and wondered what your experience is with cooking beans in the Instapot.
One of my favorite recipes for beans is greens and beans, using mayocoba (or peruano) beans. They cook up so incredibly creamy. We grow these beans in addition to buying them - they are a pale yellow color.
Recipe: 2 bunches of kale, destemmed and chopped
Boil the kale for 5-8 minutes, drain. Less time for young tender kale, longer for tougher kale.
3 large cloves garlic, minced
1 TBSP fresh rosemary, minced
1/8-1/4 tsp crushed red pepper
1 cup well flavored broth - we like vegetable or chicken
1 can, or 2 cups, cooked beans WITH cooking liquid - any white beans are preferable, but our favorite is the mayocabo beans. Heat 1 TBSP olive oil in large skillet (or water) and saute the garlic, rosemary and crushed red pepper until fragrant, 1-2 minutes. Add the beans with their cooking liquid. Smash about half the beans into a gravy. Add the broth. Simmer for about 8-10 minutes, stir occasionally. Add the greens and heat through. There should be a nice bean gravy. If too dry, add water, too soupy, cook off some of the liquid. Adjust the saltiness to taste.
This is also good with other greens - chard, beet greens, etc. I have made this with dried rosemary, too, but use about 1 tsp and crush it well; and garlic powder, about a half a tsp-1 tsp. I like garlic, so I err on the heavy side.

@@audreysmith2557 I cook beans in the instant pot all the time. I set it for an Hour and 16 min. Add seasoning of your choice. You can add ham if you eat pork. Have never added oil, ever. Adobe milling in Dove Creek, Co is where Anasazi beans come from. Although I have heard people have it elsewhere and grow it by a different name. The Anasazi bean name is trademarked, but not the actual bean.
Anasazi beans are the ones I prefer to store and use I find they taste like pintos but slightly creamier and cook in half the time of regular pintos. Of course I should quantify that I don't use the soaking method I clean wash well and for a pound of beans 6 cups of water season to taste

Pinto ... Costco, Sam's Club or a hispanic market. You can get some bigger bags at WalMart or WinCo of black beans and pinto. Specialty beans are harder to find.

When I first started storing food I didn't have access to oxygen absorbers. Maybe that's what you saw? I always use oxygen absorbers now ... for like the last 15 years. You will get a slow transmission of oxygen over time through the plastic. However, the studies show that is VERY slow. YES! Use oxygen absorbers with dry goods except sugar, salt, and baking soda.

Yes but know that the seasoning packet will not last as long as the beans. It will turn really hard.

Where do you get your Anasazi beans from? I can only get a one pound bag at IFA, when and if they have them. I use to pick them up directly from them in Dove Creek, Colorado as I drove through from visiting family in the Four Corners area. Family moved.

How do you feel about cooking beans and freeze drying then for long term storage? In case you are afraid of having to conserve cooking fuel?
I ran 5 trays in my fd and it was not very successful. They powdered up and the fd actually sucked the dust through its vacuum hose.
Not sure about freeze drying, but you can cook and then dehydrate them. A Purposeful Pantry is a dehydrating Chanel and website that is filled with info for this.
We freeze dry chili and some bean dishes but I personally wouldn't just do the beans. We cook them in an InstantPot and eat so many of them that it would be so much extra work. I think it would be a great idea to have some for a short term emergency. However, if that is best for your circumstances I'd do it.

Yes. I would use an oxygen absorber but there is no need to freeze them if you use an oxygen absorber so I'd skip the freezing.

I wouldn’t keep them in the original bag. That flimsy plastic would degrade faster than Mylar.

Mylar bags are at risk for rodents. The buckets are a nice secondary storage to help protect them.

Oxygen absorbers create an atmosphere with no oxygen. Bug have to have oxygen to live. We have never opened one of our food storage containers that was properly packaged that had bugs in them. We've seen quite a few from others who didn't do it correctly that had bugs.

I would be a bit concerned about cleaning them all the way. Oil is sometimes harder to clean. As long as you can get them clean I'd do it.
Another channel said that no matter what method you use to store beans, after 2 or 3 years they harden and become inedible, regardless of how long you cook them. Is that true in your experience?
Baking soda softens hard beans. Can also make bean powder.
You can also cook them in a pressure cooker to help with that.

No oxygen means no life. You are welcome to freeze first but oxygen absorbers in an airtight container is a sure fire way to beat the bugs.
