Add some lime juice to heavy cream. Set it aside for 5 min so it slightly curdles. You can use that. Or
Use lime juice only

The aroma of liquid smoke is very different from ghee+charcoal. It’s going to taste differently delicious, so I would say why not!!? 😊😊
