Not only WhatsApp but other apps, websites and person can track us because we're online mostly that's why it's a good practice to use internet with VPN.

Major points you missed:
1. WhatsApp messages are end-to-end encrypted, but the chat backups it takes from time to time are not.
2. Telegram App is open source but its server side is not open source. Means we don't know what happens on the server side.
3. Signal app is fully open source, so best for privacy.
4. Telegram normal chat messages aren't end-to-end encrypted and only "secure chat" messages are end-to-end encrypted.
My advice is same as Elon Musk's advice: Switch to Signal
