  • We all love our mum's cooking and this is one of my mum's recipes that I absolutely love!
    I watched my mum make this recipe step-by-step sp that I could duplicate her curry and I had great success, so I'm sharing this delicious curry with you. Plus it's vegan!
    On my website, I' have written instructions on how to make it in an Instant Pot, a regular pressure cooker or stove-top, so do check it out! Enjoy! This one's from my mum to you all! ENJOY!

    INGREDIENTS
    200g Lila Vaal (Surti Vaal)
    280g Aubergine
    1 Medium Tomato
    100ml Pureed Tinned Tomatoes
    2 tsp Ginger-Garlic-Chili Paste
    ¼ tsp Turmeric
    ½ tsp Red Chili Powder
    1 ½ tspn Coriander-Cumin Powder
    ¼ Cup Oil
    1 Dry Red Chili
    ¼ tspn Mustard Seeds
    ¼ tspn Ajmo
    ¼ tspn Hing (asafetida)
    20g Gud (Jaggery or Brown Sugar) (Optional)
    Chopped Coriander to garnish

    Great recipe 👍 love your traditional style recipes.As you know I have made so many of your recipes the Handvo and dhokla I make every weekend.i will definitely try this one thankyou.🌹

    Hi Milhan, I just made this shak and turned out absolutely delicious. Thank you so much. I love lilva n always cooked only 3 whistles but as you said it needs more. Not sure how I can upload pic :) Again Thank you.

    I like this shak a lot and yes i did think these many whistles to cook vegetable dish? Surprisingly the Aubergine didn’t get all mushy. It looks like lagan nu shak 😋 except in lagan nu shak, we get to see the floating oil too.😃

      The jaggery is optional. You don't have to add it, but we Gujus love our sweet & sour curries!

      @@MilhaanHome Love the recipe and if its your mums recipe then don't change it! Its surprising how much Gujarati circles vary though as my family and friends do not add sugar and jaggery to everything and every non-gujju I meet has this stereotype that we can't shake off now.

      Yes, true! My mum loves sweet and sour. I like things a little less sweet and many gujjus I know like food with no sugar! Tastes vary a lot! I think viewpoints on health and diabetes are changing a lot too, for the better of course! Everyone can enjoy the recipes and adjust them to their taste! :o)
