    Keef, you are my hero! Pie is indisputably (for me, at least) the finest culinary creation of Homo sapiens and I admire your adherence to the dictum, “If one must eat, why not let it be pie?”. I aspire to obtain your facility in effortless crust creation. My fullest respect to you, lad.

    Yummy! I'd probably eaten those bits of meat as they were, looked so good. And the wine. And the mushrooms!
    This reminds me, I could put some mushrooms to my lasagna today!

    I was about to ask if a shorter cooking beef could be used as an expensive shortcut but I take it back. That stewed beef is gorgeous. I’ll be making this. Wow!

    Carl Sagan's book Contact, a supercomputer is calculating the digits in Pi, after many years there's a pattern and a message. The mind boggled!

      I wonder if anything like that is still going on - the supercomputers now are way beyond anything Sagan imagined. But probably all tied up mining for Bitcoin!

      It was Duck & Venison, and some Pork. So it didn't make it in Pie v1.0, but it was wonderful in a casserole!

      I heard the pork venison and duck but my ears perk up at “duck.” In my mind duck is the bacon of poultry. That must have been Some casserole!

    Keef, the classic chef's way to put the Stilton through the meat is to grate it into the gravy whilst it's still warm. However, I rather think your way might be better. Thinking of the pastry cheese straws my dad used to make, I'm thinking your slices of cheese under the pastry lid will blend into the pastry as well as the meat, which should give a delicious cheesy-pastry flavour. I can't wait to try it.
    BTW, feta or Lancashire cheese are alternatives to blue cheese. They have the right strength of flavour and texture.

    Looks delicious!!! Never had Stilton (I should see if my local supermarket carries in NYC outer borough) but love bleu cheese, so I suspect I'd like it.

    I suppose British pi day would have to be April 31, which isn't actually on the calendar but perhaps May 1 could fill in.

    Hey Keef have you had fried okra? I'm growing a load, in pre-fried condition of course; I've got nine plants started. My greenhouse is a broken-down old vehicle, of which there are plenty in America, probably more than people. I built a cold frame but it flooded, haha. Fried okra is wonderful though. Also I found a four-leaf clover in amongst my cabbages today.

      I don't think I've had it fried. I've had it boiled and slimy, wasn't impressed.

      Breaded and fried is the best way I know of. It's a very meaty, satisfying vegetable when done right.

      Yeah - I do that with courgette/zucchini - I imagine they're pretty simaler cooked like this.

      I don't know Keef, okra has a very umami, mushroomy quality to it. Definitely worth a try cooked right. The old air fryer would probably do it right.

    Keef, I knew this would bring out the nerd in us! When I was a kid I learnt pi to eleven decimal places because an Horizon programme said that with that precision you could measure the size of the universe to within the width of an atom (they never explained how, however). Anyway the pie looks fantastic!

    That looks and I am sure tastes amazing Keef.. shame the first one fell apart, but I am sure it tasted delicious nonetheless!! Enjoyed the painting on the Pi .. its strange, because when I see you cutting up meat, being a left hander, it looks "awkward" to me, but when you paint left handed, it looks exquisite 👌

    Ah hum, Keef. Month-day-year is the archaic British way of writing the date, which along with many other so-called "Americanisms" were gotten from the old world. It's common in all empires for colonies to retain the older way of saying things 😝. So there!
    Yes, Keef, another great choice of pie. I love beef and Stilton. An absolute classic.
    Tonight we're having Weiner Schnitzels, using humane "rose" veal from Waitrose, as prompted by your mention of veal in your last recipe. But I'm thinking a Beef, Ale and Stilton pie may be coming on Sunday. Might even use those dried porcini mushrooms I've got in the cupboard. You've made me and my crazy cat hungry again.

    Hey Keef! I have 2 questions about this for you - my kids like blue cheese but hate when I use wine in cooking. Would it throw the consistency off if I used beef stock instead? Also, have you made the hot pastry with butter on your channel before? I don’t want to have to go out and buy lard or shortening if butter works fine, I just want to make sure it’s just as tasty that way. We can’t get small quantities of lard or shortening around here, just big cans of crisco and lard. I do have wagyu beef tallow I can do half that and half butter if you think that would work too. Thanks for another great looking recipe!!

      Tallow or butter or a mix will work fine. The cheese, use ordinary cheese if you like, or leave it out, but a strong sharp cheese adds a piquancy.

    This looks like something I might be able to make without too much incident. Usually, I have a hard time finding one or more ingredients. With this recipe, I know my local supermarket has beef and stilton. I was expecting some math involved in working out how big the pie crust needs to be - but I think your way was infinitely easier.
    Edit: I did actually make this, minus the pi decoration, and it was really good. Best thing I ever made. Admittedly did not have stiff competition, since the only other thing I have made successfully is Christmas cake.

      LOL, the first version I built as a slab construction, so I did have to use pi * D to work out the circumference!

    Ey' up Keef. Well, 'ow do! Just watched this video on a beef, mushroom, and stilton pie for Pi Day. Never 'eard of Pi Day before, but sounds like a good excuse to me for makin' a grand pie. The bit about 3.14 an' all that took me back to school days, though I never thought I'd be usin' it to cook a pie! Must say, that pie looks proper tasty. Could 'ave it any day of t' week, not just on this Pi Day thing. Beef, mushrooms, and stilton? Can't go wrong with that combo. Gonna 'ave to give it a go, even if it’s not March 14th.
