Neapolitan Pizza Recipe (Deep Fried Method)

    Welcome to the second part of the Neapolitan-style Pizza making. Today we will deep fry the entire pizza disc, and create a tasteful combination of toppings to form a mouthwatering Deep Fried Pizza. In Naples, these are called "Montanara", a deep-fried pizza. Here I call it an MZK specialty, and it's seriously a treat, to really have it once in a while. My dough is 75% hydrated making it super light, with the help of my new yeast Angel Instant Dry, I was able to achieve the perfect fluffy yet crispy crust.
    Ingredients:
    560 g 00 Flour
    420 g Water
    1 g Angel Yeast Instant Dry
    17 g Salt

    My Napolitan momma made this all the time. It was a Friday night treat especially during lent. Usually shed just top it with marinara and fresh local mozzarella keeping the anchovies on the side. In summer we'd enjoy the fresh basilico from the garden too.

    Perfection! I never thought of frying pizza, but what a great idea. My favorite is Neapolitan, but whenever I make your Detroit style everyone loves it. It is delicious. I'm sure they would love this too

      Yeah. Hungarian Lángos is the best. That's fully cooked in oil and sometimes has potato in it and is more about the crispiness than this recipe.

    Hi MZK! I’ve been following your journey for a while now….you are one of my favorite content creators! I’ve made several of your dough recipes among other things. You’re very inspiring! Picking a favorite pizza style is like picking your favorite child!     I did this recently with a dough made from the whey of a batch of homemade stracchino cheese. I topped it with the cheese and some mortadella. Best thing I ever tasted. The whey really helps with the browning of the crust. I didn’t have to turn on the oven.

    Don’t know if you already solved your spotty dishwasher issue, I left a comment back on your pizza Rosso video, thought I’d leave one on your latest one too. After your dishwasher starts, empties the pre-waste, and starts filling the initial time, add a big splash of white vinegar, as much as you need to to fix the issue. Maybe a half cup to start? I had my kitchen redone (no dishwasher) and when I first started running mine, our hard water did the same thing. I keep a gallon jug of white vinegar under the sink, and when the washer fills, I reopen it and splash in some vinegar. Presto..sparkling glasses etc at the end!

    Fried pizza. That's a first for me. I never fry. Never feel like dealing with the used oil and the mess frying makes. Looks good though.

      Perfect for pizzas. Didn’t try it for anything else but has an insane amount of protein so a longer fermentation is very much recommended!

I can find several kinds of Italian "00" bread/pizza flours, including Manitoba Flour, but am I crazy for thinking that most mass marketed US Bread Flour generally works as well, if not better, for home-oven pizzas? I currently am using Bob's Red Mill and really like it for both hand-stretched & pan pizzas.
