get some volunteers from local restaurants who want to promote their restaurant/skills. Set up a little show where they each have to build a sandwich from their restaurant. Then each competitor has to try to plus it up after with ingredients from their restaurant or that you brought in. Then are ranked by you.
second round you make a sandwich and then give it to each restaurant to plus up and rank the winner

I am around Chicago, so no input on location. Instead, I have to point out that you absolutely have enough characters for an On Ice. Guest hosts, historical cookbook authors, or the most famous and/or infamous sandwiches themselves could all be characters. SANDWICHES OF HISTORY ON ICE OR BUST!!!!!

Come to Phoenix, the fifth-most populous city in the US. We have a local bookstore chain (Changing Hands) that hosts authors on indie tours, are a convenient air travel stop, and are no slouches in the torta game-we get new food trends from México and elsewhere in Latin America almost as soon as they start.

Grand Rapids Michigan had a competition for several years where many restaurants in the area invented new sandwiches in an effort to create The "Grandwich"; a city-defining sandwich to celebrate our little metropolis. There were many submissions for several years and winners were declared annually. Though none of them became permanently representative of the community, nonetheless many great sandwiches were made and eaten. There are many online articles referencing this. It has been on hiatus since 2019 but many are hoping for a resurrection.

Barry, if you come to Houston I will personally take you to all the best sandwiches I know of in and around town.
I know where to get fantastic cevapcici.
(A Bosnian place that was features on Diners, Drive-Ins and Dives.)
And there's a great place for a killer burger that you'll never forget.
(They put jalapenos and onions into the ground beef.)
And we can go to the lord of the rings themed cafe where the menu is buckwild and delicious.
(My favorite is this one sandwich that's curry chicken salad with grapes.)
And an ahi tuna steak sandwich that you will not even believe.
(It's basically got a greek salad on it.)
AND I will take you to have a sandwich that is amazing AND you have absolutely never heard of which I won't spoil the secret of.
AND I will give you a paper copy of the special, one-of-a-kind sandwich that I invented while working for two years at a local sub shop.
(I call it "The Mad Pig".)

PLEASE come to Oklahoma City! We’ve got a great up-and-coming culinary scene with now multiple new James Beard Award winners and Best New Restaurant awards from Bon Appetite and NYT. We’ve got loads of history with great sandwiches, and so many cool and creative venues that I’m sure would be perfect for whatever the SOH Live! experience turns out to be. Plus, we’re obviously very well centrally located, so we’re bound to be on your way to somewhere else.
Would definitely be cool to see a localized sandwich of history component in each city you visit. I know that not every single city has a traditional pop cultural sandwich, but maybe a newly created sandwich based around local favorites or delicacies?
    Looking forward to it!

I'm already in Chicago so I'm locked in, but it would be a great segment to prepare some city's particular sandwich with plus ups. An Italian Beef plussed up perhaps? As far as what would be cool to see...what immediately comes to mind is doing a sandwiches by state sort of thing (apparently Nevada's is the patty melt...cool!).
    Other random thoughts:
An Iron Chef sort of thing based on time period
Sandwich based world record attempt (whatever that possibly could be lol)
Sandwich city tour ranking the best sandwiches of each city (basicially the suggestion above but city vs. State based)
Anyways that's just what I got immediately off the rip, in any case, come to Vegas!
