  • If you’re looking to add strength to your dough and and achieve a more open crumb with a high hydration dough then this is the way to go
    The dough is folded gently on top of its self. If I’m aiming for an open crumb I’ll perform 3-4 of these throughout bulk fermentation with an hour in between
