sorry so late but baby fish are called fry. IDK? fry, fingerlings, minnows, etc.
the fry are all taking an air bubble at the same time. I personally think that air bubble (which sits in the roof of their mouth) is a buoyancy device

There is some very colorfull fish in the wild too. And it doesn't look like a farm, it would be impossible to caught them in the plants.
